KATTI PANEER ROLLS(PANEER CHAPPATHI ROLLS)








                                 Katti paneer rolls(Paneer Chappathi rolls)



               Paneer is an interesting ingredient that can be combined with any dish.This recipe is given by minnie gupta from thelady8 for the SNC group.A very interesting recipe but I often do this for my kids becoz it's apt for taking to school and can eat it easily.Still I haven't tried with this much of vegetables.Thanks to minnie this is really healthy and fullfilled.

okk okkk I'm not boring you friends here is my recipe............:)

  

Ingredients: 

Dough:

whole wheat flour-1 cup  

 salt to taste 

 water to knead  

kasuri methi(dried)-2 tbsp  

Method:

       In a bowl add wheat flour and salt mix well and add water to knead a smooth dough.I think it may take 1/4 cup or below.set aside with a wet cloth on top.Heat Tawa and do chappathis as usual.

Filling:

paneer-6-7 cut into long strips   

ginger-garlic paste-1/2 tsp   

red chilly powder-1 tsp  

curry powder-1/2 tsp 

 cumin powder-1/2 tsp curd-1 tbsp 

salt to taste  

Method:

          Coat all the given ingredients to paneer strips and rest them for 5 mins.Heat grill or non-stick tawa lightly oil the surface.

filling:

capsicum and carrot-1/2 cup,cut into julinnes sauted lightly with oil ,salt and pepper

cucumber-1,cut into thin strips and deseeded.

To arrange:

             Take one chappathi fill in paneer tikka strips,cucumber strips,capsicum and carrot julinnes add some dash of tomato sauce and roll them tight and cut into half and serve..

CHOCOLATE SWIRL BABKA MUFFINS


Chocolate swirl Babka muffins

We make muffins in a small cup cake moulds by using the batter.This muffins is made of softened dough stuffed and rolled out like a cigar a big one haha.........:) suggested by swathi iyer from baking partners.She suggests really wonderful and funfilled recipes everytime.

Even it looks like a budding rose..........My kids love whatever I prepare and this is with chocolate filling..........other than that no words to say.....................The plate is empty after few seconds................Swathi told it makes 12 muffins but I've got only 9,I don't know why :P

Ingredients:

Filling:

choco chips-3/4 cup 

brown sugar-1/4 cup  

cinnamon powder-1/2 tsp(if u dont like it avoid it) 

 salt a pinch  

butter-3 tbsp

            Blend them to make crumbles and set aside.

Dough:

Maida flour-2 cups  

 milk-1/2 cup   

sugar(powdered is best)-1/4 cup 

   salt-1/2 tsp  

egg-1  

yeast(dry or instant)-2 tsp  

 butter-3 tbsp  

Method:

                                   In a bowl add warm milk 1 tbsp from 1/2 cup salt 1/2 tsp then add yeast set aside to prove.If you use instant yeast you can mix them all immediately but for dry yeast you have to wait for 10-15 mins till it bubbles up.In a bowl add in remaining ingredients except maida,whisk it.Add in maida flour knead till it combines well then attach hook attachment and knead the dough till it rolls well and not stick to the surface.Can knead by hand itself but you must have patience and strength :P.You can use hand machine to knead the dough but important is kneading the dough till soft and non-sticky........

                                 Place them in a greased bowl  and place them on a warm place and allow them to prove for upto 2 hrs.Dust the surface and knead the dough well and roll them like sheet in 11/2 inch thick .coat butter in all over the sheet and sprinkle the filling leaving the edges.Now roll them tight to form a cylinderical shape.Cut them 21/2 inches thick and place them in cupcake moulds.

Leave them to rise again for 45-50 mins,In a meanwhile Preheat the oven to 190°c and bake them for 15-20 mins.


Note:

In original recipe they used strausel topping but I avoided it if you want to use

Mix 1/3 cup sugar,1/4 cp flour,3 tsp butter and sprinkle them on top when baking.

ZEBRA CAKE

        Cakes.......................Tell me who doesn't want cakes?Upto my knowledge everybody loves cakes egg or eggless................

No one will hate eating cakes even vegetarians loves cakes.The colorful cakes...no other arguements.....

This Zebra cake is one of that kind  its colorful and yummy....Enjoy my treat given by pallavi through Home bakers challenge by priya.

     

Ingredients: 

cake:

Flour-2 1/4 cups  

sugar-11/2 cups 

 baking powder-1 tsp  

baking soda-1 tsp 

 lemon juice-1 tsp  

salt-a pinch 

 milk-1/2 cup 

 oil/butter-1/2 cup(the texture will differ for oil and butter)  

vanilla essence 

warm water-3/4 cup(its enough in original recipe they use 11/4 cup but it'll be too watery)  

 any one color-a pinch I used pink my fav :)      

          Beat wet ingredients and sift the dry ingredients and mix together without any lumps.Half them and add color to one half.

            Preheat oven to 180°c.

        In a greased baking pan pour white mixture in a round then add pink mixture inside can pour according to the texture effect you needed.Bake at 180°c for 45 mins and cool completely.May be for one night.

cream:

whipped cream-1 cup

 icing sugar-1 tbsp

cream cheese-1/4 cup 

            Beat cream and icing sugar till peaks form add in cream cheese and whisk well.store in fridge and use.

Frosting:

whipped cream-1 cup   

nutella- 2 tbsp  

cocoa powder-1 tsp  can add instant coffee powder-1/2 tsp to enhance mocha flavour  

icing sugar-2 tbsp  


           Whisk cream and icing sugar till peaks form add in other ing.whisk well freeze and use(I used melted version)

To decorate:

color sprinkles,color gimmies,chocolate shavings.......


Assembling:

               Slit the cake into half,In one half spread the cream and close with another half then pour/pipe the frosting and decorate with sprinkles,gimmies and chocolate shavings and enjoyyyyyy the delicious cake...................

STRAWBERRY AND CHOCOLATE DELIGHT TART




                    Strawberry and  chocolate delight tart

                      This is my 3rd post for our 5 Ingredient fix challenge in my blog.I feel so happy to do this post and thank my fellow bloggers and non-bloggers who are the part of this challenge and their support to this challenge.

                   This time my elder daughter and my friend suggested the ingredients for the challenge.The 5 ingredients are:

  1. STRAWBERRY OR ANY KIND OF BERRY
  1. CHOCOLATE
  1. CREAM
  1. HONEY
  1. WALNUTS

                       Have to prepare a cold dessert for ex; an Icecream,mousse etc......not a juice or smoothie and dedicate it to your kid to celebrate their summer holiday.

                               I don't get an idea what to make,I take off all the ingredients needed for the challenge from the fridge.Suddenly my recipe ferrore rocher tart came into my mind,Why not to make a tart filled with fruits and chocolates and this time I give the variation of making the base without flour and baking but with crushed darkfantasy biscuits.My younger daughter helped me to make this recipe.A yummy and delicious tart recipe follows for you.......

Chocolate mousse:

Ingredients:

Chocolate-100 gms,chopped  

Cream-100 gms 

 agar agar jelly-1 tsp melted in 1/4 cup hot water

Method:

             Heat cream and add to chopped chocolates stir well till it dissolves,cool them.Add the melted agar agar jelly to the mixture just before assembling.

Strawberry-Honey jam filling:

Ingredients:

Strawberry-3/4 cup    

Honey-1 tbsp  

Demerara sugar-2 tbsp to 1/4 cup  

Crushed walnuts-2 tbsp 

Method:

         Mix all the ingredients in a pan and cook them till it form like a jam consistency.

Strawberry marmalade:

Ingredients:

Strawberry-1/2 cup  

strawberry marmalade

sugar-2 tbsp 

 orange juice-2 tbsp


Method:

Mix strawberry,orange juice and sugar boil for 5-10 mins,but the strawberry should not over cook.


Tart Base:  

Ingredients:

Dark fantasy choco fill  biscuits-500 gms(remove chocolate cream from the biscuit and crush them to a fine powder)    

 Butter(melted)-2-4 tbsp 

vanilla essence-few drops  

cocoa powder-1 tbsp  

vanilla sugar/sugar powder-2 tbsp


Method:

                                Mix together crushed biscuits,vanilla essence,cocoa powder,sugar powder add melted butter slowly from 2 tbsp to 4 tbsp to form like a dough.  Take a round spring form tin(to remove the tart easily) fill the dough in the base and press down the sides with a round shape box to make a bowl shape.Set in freezer for 1-2 hrs.

                                       Remove from fridge fill one layer of strawberry-honey jam filling then mix agar-agar jelly into the chocolate mousse and pour over the base.Set them in fridge for 1 hr and gently release belt and remove the spring form rim and decorate with whipped cream on sides and arrange fruits.Fill strawberry marmalade in centre and sprinkle walnuts and chocolates shavings on top.

MAWA GUJIYA WITH CARROT HALWA(SAMOSA STUFFED WITH CARROT HALWA)

                                    This is my recipe for SNC challenge by  Santosh Bangar from santhosh's kitchen.She has give this recipe to challenge our south team.I'm so happy to present my recipe to her challenge.It is a delicious evening snack to enjoy with your family.

                    In original recipe the filing was made from Mawa and coconut but i've twisted the recipe by filling Delicious carrot halwa inside it.Yummy and delicious Gujiyas i've got............

Ingredients:

Carrots grated-1 cup   

sugar-1 cup 

 Ghee-1/4 cup 

 nuts-1 tbsp 

Milk-11/2 cups 

salt a pinch(to enhance the sugary flavour)   

Mawa/condensed milk-1/4 cup


Method:

                       In a pan add half of ghee and grated carrots saute well till the raw smell disappears.Now add in milk and cook till the carrots cooks well and reaches mashy consistency.Add in sugar and mawa saute well when blends and rolls like a ball add leftover ghee and nuts mix well and remove from fire.

Gujiya dough:

Maida- 1 cup  

 cornflour-1 tbsp  

 salt a pinch

 powdered  sugar-1 tsp

               Mix all together add water and knead to make a soft dough.

Gujiya:

        Take out a lemon sized  dough and roll them round.Fill in the carrot halwa in centre and fold into half.Now pierce them with fork on sides to seal them or you can use gujiya mould to make perfect gujiyas and fry in oil to golden brown.Now enjoy the hot gujiyas with juice............

SPRING ROLLS

                                     

                                               Spring rolls                              

                      These rolls are actually in the shape of a cigar and crispy.Generally  we make dosa from the batter and fill the filling roll them and fry in oil.I have made a dough and roll the dough into thin sheet and do the rolling.I is crispier than the regular version.I've speacially made this for my daughter's b'day and within a seconds it vanished from the plate.ha ha ha nothing left for me to taste.But don't tell to anyone i ate 3-4 rolls in the kitchen itself while making it :p

You can use Rice paper sheets available in departmental stores.

Ingredients: 

For the dough: 

Maida-1 cup 

Corn flour-1/4cup 

Salt to taste 

Ghee-1 tbsp 

Carom seeds/ajwain-1/2 tsp 

Warm water to make the dough.

                         Another method to make the spring rolls is to mix above given ingredients except ghee to make a thin batter with water.Heat a griddle/Tawa pour one scoop of batter roll them to spread and when it coats the Tawa pour out the excess and  cook  for only 2 mins on both sides.Do it like thin dosa/crepes.


For the filling: 

Onion-1,chopped

Beans-100 gms,chopped

Carrot-1 big,chopped

Mushrooms-1/2 cup,chopped

Soy sauce-1/2 tsp

Red chilly powder-1/2 tsp

Curry powder-1/2 tsp 

cumin seeds-1/2 tsp  

 oil-1 tbsp  

 salt to taste 

pepper(dashed)-1/2 tsp  

Corn strach:

Mix equal parts of cornflour and water.

Method:

           In a pan add oil and cumin to splutter add in onion,beans,carrot saute a while till half cooked add in mushrooms saute well till cooked well.Add redchilly powder,soy sauce,curry powder mix well to form a good filling add dashed pepper and set aside to cool.

To make spring rolls:

  1.      Take a lemon sized ball from the dough roll them flat and a very thin round sheet...For rice paper sheets dip them in water and  for crepes/dosa make it ready.
  2.  Place them in a flat surface put a spoon of filling over one side.fold them in sides and fold again in centre to look like a cigar roll.Grease with corn starch and set aside.
  3. Heat oil in a pan and fry the rolls till golden brown and crisp.
  4. Serve hot with a dipping sauce.
  5. To make simple dipping sauce Mix 1 tbsp tomato sauce, 1/2 tbsp red chilly sweet sauce(recipe follows later), salt a pinch, chopped  coriender leaves mix well and serve.

ARIPATHRI WITH KERELA PATTANI KOOTU AND CHOOPU CHAMMANDHI


Aripathri  with  kerela  pattani  koottu  and  choppu  chammandhi

   
                                            This is my first guest host for the SNC event by Divya from http://www.youtoocancook.net/ .I feel so happy to host on behalf of the south team. We’ve decided to give the challenge for the north team to cook a delicious tiffin recipe from the interior parts of kerela. I’ve selected Aripathri, a naadan (typical)dish from  Malabar coast. Usually muslims live there prepare this dish for special occasions and for their Ramadan fasting. The best combination of this Aripathri is with beef curry. In kerela cusine this recipe gets an important place.

                                         This is made of rice flour and in  Venezuela  people  make as  Arepas with corn flour and stuff something inside the arepas like sandwich.
                                  I’ve suggested here Aripathri with kerela pattani koottu(peas curry) and choppu chammandhi(coconut red chutney).They make an amazing combination. When I prepared it for the first time believe it or not my kids enjoyed it a lot. I’ve made three batches first for my kids second for my cousins and third for my kids again for their breakfast……………….They want even more………
                             If you wish you can make both pattani kootu and choppu chammandhi  or any one of them to combine with Aripathri.
Time:10-12 mins


Yields:10-12 aripathris

Ingredients:

Rice flour-1 cup


Water-11/2-2 cups


Salt to taste


Oil needed

Method:

1.       In a pan heat 11/2 cup water and salt to boil add rice flour and stir continuously without making any lumps.(use whisk to stir)Cook for  about 2 minutes  or until it rolls like a ball.(not too hard remove from fire when it slightly rolls out because the rice flour absorbs water quickly).


2.       Cool for some time and take out a  lemon sized ball and roll them with  rice flour, roll round by hands or with rolling pin.(the dough will be so soft ,handle gently not like atta dough).Cut round with a cutter to make a perfect shape.


3.       Heat Tawa in medium heat and place Aripathri on it. Do it for 2 minutes and flip(do not touch before it is done on one side).


4.       The pathri will puff up when it is done.Now apply ¼ tsp oil on it and press them gently and flip then apply ¼ oil on otherside and press them to puff up.


5.       Do not crisp the pathris. Take out when they are white in color.


6.       It will need 4-6 minutes to cook a perfect white Aripathri.


7.       Wipe  the  Tawa every time after taking each Aripathri. It will help to have a white Aripathri till the last one.


8.       Eat them when they are hot. Can heat them again in Tawa When you use.

Peas curry(Kerela pattani koottu)

Ingredients:

Dry peas-1 cup


Onion-1 big,chopped


Tomato-1,chopped


Ginger-garlic paste-1 tsp


Red chilly powder-2  tsp


Garam masala powder-1/2 tsp


Thick Coconut milk-1/2 cup


Mustard seeds-1/2 tsp


Split urad dal-1/4 tsp


Cumin seeds-1/2 tsp


Oil-1 tbsp


Salt to taste

                                                    Cooked and mashed peas curry

 Method:

          Soak peas overnight and the next day put them in a pressure cooker add red chilly powder 1 tsp, Garam masala ¼ tsp salt to taste and cook for 3-4 whistles until the peas cooks well to mash.
         Heat a pan with oil add mustard seeds when splutter add split urad dal and cumin seeds when it turns slightly brown add in chopped onion sauté well then add ginger-garlic paste and tomatoes sauté till it cooks and mashes well(can add some salt to cook tomatoes quickly).add the remaining  redchilly powder and garam masala  sauté well.
      Now add in the boiled Peas masala into the pan cook for a while and mash it with the potato masher or with ladle.
    When it combines well add coconut milk cook for 2 more minutes and remove from fire. Sprinkle coriander leaves and serve hot with Aripathri.

Choppu chammandhi(coconut chutney)

Ingredients:

Fresh Coconut grated-1/2 cup


Dry red chillies-3(can add more if you need it more spicy)


Garlic-2 small pieces


Tamarind-a tiny piece (optional)


Salt to taste

Method:

 Grind all together and do tempering with oil, mustard seeds, a pinch of asafoetida and curry leaves.
 









                                                  Enjoy with curry and chutney
