SWEET BREAD STICKS





















Sweet bread sticks

My kids wants something to eat when they return from home. They love to have bread with variations of bread masala, bread shahi tukda or even bread spreaded with jam, nutella, mayo anything can do.......... My friend suggested this recipe with simple ingredients  yummy sweet bread sticks. I share this recipe with you for shh.....secretly challenge by priya. This time she is my partner and suggested me milk and bread. Even kids themselves can try this recipe and enjoy.....!!!!!!

Ingredients:

Bread - 5-6 slices,any kind of bread 

 Milk - 1/2 cup  

Eggs -2 

 sugar- 2 tbsp Can add more for sweetness  

 Light cream- 1 tbsp (optional)

Butter to toast

Method:

In a large bowl add eggs,milk,cream and sugar whisk them together till it combines well, cut the bread into long strips. Heat griddle/pan add 1 tbsp of butter and dip the bread sticks into the mixture and arrange them in the griddle. Toast them well till it crisps and serve hot. No need of side dish or any dips for this bread sticks. You can have it as dessert/ snack.Enjoy this snack with your kids.....!!!!!!!

JAMUN BONDA









  Jamun bonda



Bonda means a spicy/sweet fried dish in round shape.It is an Indian dish can make with some filling in it or without any filling.It is an evening snack we can have with tea or coffee.These bondas are made of instant flour that is actually used to make gulab jamun....Can't believe this???????Believe dears it is made of gulab jamun flour with some spices,very easy and simple dish that is ready to eat in 5mins........

                                Ingredients:

               Gulab jamun mix powder(any brand)-1 cup   

  red chilly powder-1 tsp  

 onion,big-1/4 cup chopped 

  asafoetida-a pinch 

 salt to taste 

 oil to fry 

Method:



           In a bowl add gulab jamun powder,red chillt powder,asf,salt mix well with some water you'll need 1/4cup+2 tbsp water for 1 cup flour.Knead the dough till thick and firm dough.Heat oil and pour 1tsp of hot oil over the dough and make small balls.Fry till crisp in simmer for about 3-4 mins........

CHOCOLATE ROLLS



                 Chocolate Bread rolls


Chocolates,chocolates........Peoples love for chocolates'll never come to an end.These Rolls are soo yummy and a perfect snack for our teatime.It is easily available in bakeries near my place but made by me is something special for my kids.......

                   I made this for HBC by priya suresh and this recipe is suggested by Gayathri kumar from Gayathris cookspot.......She is the great inspiration for most of the bloggers including me........

Ingredients:

Maida flour-300 gms  

sugar-30 gms 

 salt-1/4 tsp

Egg-1 

 milk-10 gms 

water-150 ml 

yeast-6 gms  

butter-30 gms 

Filling: 

 Chocolate strips

Method:

In a bowl add warm water,salt and sugar gently sprinkle yeast on top and set aside for 15 or till it proof undisturbed.....When the yeast mixture bubbles up add in a beater bowl attach hook attachment add milk,egg beat well add maida and knead the dough.Add butter and knead well till soft and pilable.Transfer to a greased bowl cover with clingfilm and place in a warm place for 1-11/2 hrs or till doubles.........................

Dust the floor and knead the dough well.Cut into 10 equal parts.Roll one into an oblonged shape place chocolate strip and roll tight make slits in the edge and close the roll.Place in a greased tray and set aside for 20 mins.After 10 mins preheat oven to 180°c for 10 mins,brush the rolls with beaten egg and bake the chocolate bread rolls for 25-30 mins and serve warm.......!!!!!!!!




















CROSTINI(OPEN BREAD SANDWICH)




     Crostini(Open bread sandwich)



Crostini,It is an Italian appetizer a small open sandwich made from grilled Italian bread topped with meat,vegetables,mushrooms,olives or any one of them.......................Usually it is served with wine.You can have it with evening tea or to empty the excess bread.It upto your choice :P

I used button mushrooms sauted with Italian herbs.I love it becoz it is easy to make and mouth filling.It also can be made from the scratch........

Ingredients:

Baguette or any kind of bread,diagonally cut-4 pieces  

  mushrooms,sliced-1/2 cup  

 Italian herbs,I used thyme and rosemary dried-a pinch each   

salt and pepper to taste  

Oliveoil-1 tsp

Method:

In a pan add oil heat a while add mushrooms saute well added with salt,herbs and pepper(crushed).Grill the bread and fill with topping add cheese on top and serve......!!!!!!!!!!

CHEESY CHEESE BALLS


Cheesy cheese balls

cheese.........kids love it a lot.....!!!!! These cheese balls are soo cheesy filled with yummy cheese and chewy mozarella inside.Cheese is nutritious with calcium,protein and phosphorous.It is good for gums,heart diseases etc,......

It is a yummy dish with some spice and chewy mozarellla inside.I made this for my 5 ingredient fix challenge.This time I haven't gave any ingredients specifically but have to make a fry or fritter use with only 5 ingredients.As usual the plate became empty when these fries are out of oil...............

Ingredients:

Cottage cheese(paneer)-1 cup 

 green chilly-3 nos  

Coriender leaves-1/4 cup  

Mozarella cheese-1/2 cup(cut into small cubes) Keep in fridge till use

Bread crumbs

Salt to taste 

Oil to fry


Method:

Grind green chillies and coriender leaves to a fine paste.In a bowl crumble cottage cheese(paneer) add ground spice and salt mash well.Make small balls and press with thumb in middle just stuff a mozarella cube inside and close them roll tight balls.In a plate spread bread crumbs and heat oil in a pan.Roll the balls in bread crumbs coat all sides completely and fry them at low heat.

NOTE:

  • Be careful while stuffing mozarella cubes,close fully with paneer mix.
  • If the oil is not much hot,the cheese stuffed inside may pop out.

CAULIFLOWER SCONES



           

                               Cauliflower scones


                               This is my first post for the secret recipe group by priya.She will give us partners and we have to discuss two ingredients each and we have to prepare a recipe with both or one of the choosen ingredient.It's an awesome experience with my partner srividhya and We have become good friends now and sure we'll keep in touch always.Thanks to priya for giving me such a good friend. My secret ingredients suggested by srividhya are cauliflower and milk. 

                                    I just thought of making a different dish but didn't know what to prepare with cauliflower.Suddenly scones came into my mind and not even know whether I can make a scone with a vegetable.A scone is a single-serving cake or quick bread. They are usually made of wheat, barley or oatmeal, with baking powder as a leavening agent, and are baked on sheet pans. They are often lightly sweetened or unsweetened.It is basically belongs to british tradition.

                                   I made scones with cauliflower and prepared a stuffing with onions and cheese. I feel so happy with the result I've got and the taste is awesome.It made a fantastic combination and I've got many guests to eat the scones.They all enjoyed it a lot.

shhhhhh secret recipe challenge needs one hour to make and I've got 12 scones.


Ingredients:

Maida Flour-250 gms  

salt-1 tsp 

lemon juice-3 tsp  

baking soda-1/2 tsp  

oil-2 tsp milk-120 ml 

boiled and mashed cauliflower florets-3 tbsp 

milk to glaze 

                                  

Method:

           In a mixing bowl add all the above ingredients and make a smooth dough.Flour the surface and knead the dough to make it soft and smooth.Roll them into 1/2 inch thick log.cut them into 2 inch thick roundels.Arrange them in a baking tray and brush them with milk wash and bake at 190°c for 12 mins.Cool them for a while.

For topping:

Ingredients:

Onion-1 big,chopped  

Red bell peppers(capsicum)-1 tbsp

chopped tomato-1 chopped  

 dried oregano-1/2 tsp  

dried basil-1/2 tsp  

remaining mashed cauliflower,if any 

redchilly powder-1/2 tsp 

 Grated cheese-1/2 cup  

oil-1 tsp

salt to taste 

Method:

             In a pan add oil add onions saute well add capsicum fry till it gets cooked.Then add remaining cauliflower,tomatoes,oregano,redchilly powder and basil  saute well and cool them.Grate cheese and set aside.

            When the scones are lightly cooled cut into half and one bottom half fill the topping sprinkle grated cheese on top and close with another half.Now bake them at 180°c for 3 mins and serve hot.

KOLLU THOKKU(HORSEGRAM BALLS)













                   KOLLU THOKKU

This recipe is an authentic recipe made by my grandma.She'll prepare this for special occasions.We enjoyed a lot on those days and that was my sweet memories with my grandma.But she prepared this dish with kadalai(channa gram dal).I tried the recipe with kollu(horse gram dal).It needs only 3 ingredients and simple to make,we can enjoy a delicious snack.

I made this for shhh..... secret recipe challenge by priya.I paired with poornima porchelvan from http://www.poornimacookbook.com/.She has given me Rice and Kollu.I hated to prepare a regular rice dish so I decided to try my grandma's recipe with kollu.


Ingredients:

Kollu(Horse gram)-1 cup   

Raw Rice-1/2 cup   

jaggery-1 cup  

If you wish you can add cardamom powder a pinch

Method:

          Soak Rice for 1/2 an hr.Grind them with some water to a fine paste.And place a steamer on stove and grease a tray with oil or place a pure thin cloth on that tray or bowl.pour the batter into the bowl and steam them like idlies for 10-15 mins.

In a meanwhile dry roast kollu till it changes a slight color and grind them with jaggery in the mixer.My grandma will grind it in mortar and pestel.Then add in the idlies and grind well.They'll make like a paste now roll them into small balls and enjoyyy the treat...

FLAOUNES









 




 Flaounes

In this month of Easter celebration usually people make with easter eggs or any savoury dish.Flaounes are savoury cheese pies with greek easter recipe on the day of good fridayas a part of breaking meal after lent when they do not eat meat and cheese.Any kind of cheese can be substituted in this flaounes.I've used cottage cheese(paneer),cheddar cheese and mozarella.Its so yummy and delicious and decided to make another set of flaounes.

Ingredients:

maida-21/2 cups  

 yeast-3/4 tsp  

 salt-3/4 tsp  

sugar-11/2 tsp  

egg-1   

milk-1/4 cup   

butter-60 gms  

warm milk-1/4 cup(may be less)  

oil for greasing      

For the filling:

onion-1,diced  

tomato-1,cut 

 sausage-2 strips,cubed  

redchilly powder-1 tsp  

italian seasoning-1/2 tsp 

 salt to taste  

oil-1 tbsp

for topping:

 paneer grated-1/2 cup 

 cheddar cheese- 1/2 cup 

mozarella cheese-1/2 cup 

 milk-1/4 cup


Method:

            In a pan add oil and onion saute well then add tomatoes saute till it dissolves add sausages,redchilly powder,italian seasoning,salt to taste saute till water absorbs well and cool them.   

In a bowl add salt sugar and warm milk sprinkle yeast and rest then to prove.Then add in remaining ingredients and flour knead them to form a non-sticky dough.Rest them for 1-2 hrs till it rises up.

                                      Now make the dough into big sized balls and roll them flat and fill in 2 tbsp of sausage filling and sprinkle 11/2 tsp paneer then same amount of cheddar then top with mozzarella cheese fold in the sides to make a sqaure or rectangular shape.Preheat oven to 200°c place the flaounes and pour some milk into the filling and bake them for 20-25 mins.

CHOCOLATE SWIRL BABKA MUFFINS


Chocolate swirl Babka muffins

We make muffins in a small cup cake moulds by using the batter.This muffins is made of softened dough stuffed and rolled out like a cigar a big one haha.........:) suggested by swathi iyer from baking partners.She suggests really wonderful and funfilled recipes everytime.

Even it looks like a budding rose..........My kids love whatever I prepare and this is with chocolate filling..........other than that no words to say.....................The plate is empty after few seconds................Swathi told it makes 12 muffins but I've got only 9,I don't know why :P

Ingredients:

Filling:

choco chips-3/4 cup 

brown sugar-1/4 cup  

cinnamon powder-1/2 tsp(if u dont like it avoid it) 

 salt a pinch  

butter-3 tbsp

            Blend them to make crumbles and set aside.

Dough:

Maida flour-2 cups  

 milk-1/2 cup   

sugar(powdered is best)-1/4 cup 

   salt-1/2 tsp  

egg-1  

yeast(dry or instant)-2 tsp  

 butter-3 tbsp  

Method:

                                   In a bowl add warm milk 1 tbsp from 1/2 cup salt 1/2 tsp then add yeast set aside to prove.If you use instant yeast you can mix them all immediately but for dry yeast you have to wait for 10-15 mins till it bubbles up.In a bowl add in remaining ingredients except maida,whisk it.Add in maida flour knead till it combines well then attach hook attachment and knead the dough till it rolls well and not stick to the surface.Can knead by hand itself but you must have patience and strength :P.You can use hand machine to knead the dough but important is kneading the dough till soft and non-sticky........

                                 Place them in a greased bowl  and place them on a warm place and allow them to prove for upto 2 hrs.Dust the surface and knead the dough well and roll them like sheet in 11/2 inch thick .coat butter in all over the sheet and sprinkle the filling leaving the edges.Now roll them tight to form a cylinderical shape.Cut them 21/2 inches thick and place them in cupcake moulds.

Leave them to rise again for 45-50 mins,In a meanwhile Preheat the oven to 190°c and bake them for 15-20 mins.


Note:

In original recipe they used strausel topping but I avoided it if you want to use

Mix 1/3 cup sugar,1/4 cp flour,3 tsp butter and sprinkle them on top when baking.

MAWA GUJIYA WITH CARROT HALWA(SAMOSA STUFFED WITH CARROT HALWA)

                                    This is my recipe for SNC challenge by  Santosh Bangar from santhosh's kitchen.She has give this recipe to challenge our south team.I'm so happy to present my recipe to her challenge.It is a delicious evening snack to enjoy with your family.

                    In original recipe the filing was made from Mawa and coconut but i've twisted the recipe by filling Delicious carrot halwa inside it.Yummy and delicious Gujiyas i've got............

Ingredients:

Carrots grated-1 cup   

sugar-1 cup 

 Ghee-1/4 cup 

 nuts-1 tbsp 

Milk-11/2 cups 

salt a pinch(to enhance the sugary flavour)   

Mawa/condensed milk-1/4 cup


Method:

                       In a pan add half of ghee and grated carrots saute well till the raw smell disappears.Now add in milk and cook till the carrots cooks well and reaches mashy consistency.Add in sugar and mawa saute well when blends and rolls like a ball add leftover ghee and nuts mix well and remove from fire.

Gujiya dough:

Maida- 1 cup  

 cornflour-1 tbsp  

 salt a pinch

 powdered  sugar-1 tsp

               Mix all together add water and knead to make a soft dough.

Gujiya:

        Take out a lemon sized  dough and roll them round.Fill in the carrot halwa in centre and fold into half.Now pierce them with fork on sides to seal them or you can use gujiya mould to make perfect gujiyas and fry in oil to golden brown.Now enjoy the hot gujiyas with juice............
