MALAI KOFTA

                               


 Malai kofta

                     This is the challenge from SNC group by  Divya Pramil.This month  Nupur's UKrasoi from north team has challenged to try malai kofta from mughlai cusine.I love North Indian cuisine very much.I've tried many recipes in my kitchen even these koftas but I've tried koftas from bottlegourd that was also awesome.This malai kofta is different very rich and creamy,I loved it than the previous one.My recipe follows:

Ingredients:

for koftas:

paneer-1 cup,grated

 potatoes-2 big,boiled and grated  

red chilly powder-1/2 tsp 

bread crumbs-1 tbsp

 curry powder-1/2 tsp 

milk powder-1 tbsp 

salt to taste

 oil to fry

For gravy:

onion-1 big or 2 small 

 tomato puree-1/4 cup 

 ginger-1/2"inch

  garlic-3-4 pods 

bay leaf-1 small 

cinnamon-1 stick big 

cardomom-2 nos 

cloves-3 nos

 mace-a pinch 

cashews few

 redchilly powder-1 tsp 

garam masala-1/2 tsp 

 kasurimethi-1/2 tsp 

 cream-2 tbsp 

milk-1/4 cup

 oil-2 tbsp

 salt to taste 

method:

               Mix all ingredients given for kofta except oil make a soft dough.Make small balls,If the dough is too sticky add more bread crumbs.Heat oil and fry the koftas till golden brown and drain excess oil.

           In a kadai add oil add in all spices,ginger,garlic,onions saute well till onions get brown now add in cashews saute a while,allow them to cool and grind like a smooth paste.

           In same kadai add oil add ground paste saute well add tomato puree, redchilly powder,garam masala and salt boil for some time add milk and some water boil till oil seperates.Now add cream and fried balls cook for 2 mins and remove from fire.Sprinkle kasuri methi and serve with greated paneer and cream on top.

NEWTON FIG COOKIES

                                                           I've tried many kinds of cookies but this newton fig cookies is very different and interesting to make and also very tasty and delicious.Thanks to Sharanya  for giving us such an wonderful recipe.

Ingredients:

flour-11/2 cups   

 Butter-8 tbsp 

  sugar-1/2 cup  

 orange rind or orange marmalade- 2 tbsp 

  Egg white from 1 egg     

 vanilla essence-1 tsp 

salt- a pinch  

Any jam or nutella-1/2 cup 

method:

Combine butter and sugar beat well till soft and creamy. Using of powdered sugar will make your work easy.

Now add in orange rind/orange marmalade,vanilla essence,egg white,salt beat well then mix in flour and make a soft dough.

Wrap them with clingfilm or close in an airtight container and keep them in refrigerator for 2 hrs.To save time,you can place them in freezer for 1/2 hr to 45 mins.

Preheat oven to 180°c.

Use the dough after 5 mins taken from fridge before it reaches room temperature completely.Roll them in a long rectangular shape line them into three parts place jam or nutella in centre part and close with one another to make a complete wrap and smudge the edges.Bake them in 180°c for 12-15 mins and cut into rectangular pieces,cool and serve.

EGGLESS CHOCOLATE BROWNIE WITH APRICOTS

         
          

 

   Eggless chocolate brownie with apricots

                          Hii friends Happy valentine's day. When we hear of the name valentine immediately our thoughts will go to chocolates and roses.It is an excellent gift for our valentine to make them happy.

                   This cake is very very chocolaty and delicious with crunchy nuts and apricots.Enjoy your valentine's day with this chocolate brownie friends.........

Ingredients:

Maida-1+3 tbsp  

  cocoa powder-3/4 cup or dark chocolate-200 gms 

 butter/oil-1/2 cup 

 vanilla essence-1 tsp  

milk-1/2 cup+2 tbsp(adjust milk to get ribbon consistency) 

 walnuts-50gms(can use anykind of nuts)

 dried apricots-50 gms(soak them in hot water for 10 mins and cut them into pieces)

 demarara sugar(brown sugar)-11/4 cup,powdered

 baking powder-2 tsp

 salt-1/2 tsp(adding salt to chocolate cake will enhance the taste)

For ganache:

cream-3/4 cup  

 dark chocolate-1 cup

Method:

       Preheat oven in 190°c.

  Sift maida,baking powder,salt,cocoa powder for 3 times to combine well and set aside.

In a mixing bowl beat butter/oil and powdered Demerara sugar till soft and creamy. 

Add in vanilla essence and half of milk beat well then fold in maida mixture with wooden/rubber spatula add rest of milk according to the consistency,Now fold in walnuts and apricots.

Do not use the blender to mix maida mixture and nuts.

Pour in a greased baking tray or pour in a round/heart shaped cupcake mould and bake for 35-40 mins.

Ganache:

                   Heat cream till boil and stir in chocolates till it melts and combines well.

Cool them and can decorate with ganache and chocolate shavings or chocolate butter cream.Now give it to your valentine with love and affection.

TREE CAKE(BAUMKUCHEN)

                            Tree cake(baumkuchen)


                      It is an awesome cake with layering effect.It looks easy but very hard to make with proper layering.This cake tastes soo good and gave me a confidence in baking.


Ingredients:

Batter:

 eggs (room temperature)-6 large

pinch of salt

 granulated sugar-1/2 cup plus 2 tablespoons-

marzipan-2/3 cup  

softened unsalted butter-1 cup minus 2 tablespoons 

confectioner's (icing) sugar-3/4 cup

vanilla sugar-2 teaspoons 

 all-purpose (plain) flour (sifted)-2/3 cup

Glaze:

 apricot jam (or any kind of jam i used mixed fruit jam)-1/3 cup 

 orange liqueur (optional)-2 tablespoons(you can use orange juice) 

 dark chocolate-1 cup 

 pure coconut oil-1 tablespoon (can use refined oil)

Marzipan:

 Almonds (Blanced)-200 grams 


  Powdered Sugar -200 grams 


 sugar syrup-1/4 cup


 Almond/ Vanilla  extract-1 tsp

Method:

                                      Blend almond to a coarse mixture and add sugar blend well then add rest of the ingredients and knead to make a smooth dough.You can store them in fridge covered with clingfilm.

Vanilla sugar:

sugar-1 cup 

 vanilla pod-1,cut into pieces 

 Method: 

                               In an airtight container put sugar and vanilla pod close the lid tight an place them in a dry place for 1 week.Now the sugar smells vanilla.This is vanilla sugar.Instead you can use vanilla essense with sugar mix well and use immediately.I used vanilla pod but the scrapped sticks,which we through out unused.you can use them in making sugar syrup too......

Directions:

1. Preheat your oven to hot 450°F/230°C/gas mark 8.

2. Line your cake tin with parchment paper, grease both paper and tin.

3. break eggs and seperate them.Beat whites until stiff with salt

4. Crumble finely the marzipan. Beat it with the softened butter, confectioner's (icing) sugar 

and vanilla sugar until soft and creamy. Add the egg yolks one by one and beat well between each 

addition. Add the stiff egg whites and flour and gently fold it into the batter. Trying not to lose 

too much air.I seperated the batter into two and added cocoa powder to one half.

5.Pour the vanilla batter to coat the bottom  keep the sides of the pan clean, and bake for (about) 4

minutes in the oven, until it is cooked and brown. Take the pan out of the oven, pour the next 

portion of cocoa batter carefully over the first, and bake for another 4 minutes or until cooked and 

brown. Repeat until all batter is used. If you need to flatten a bubble insert a tooth pick or similar 

to deflate the bubble.

Let the cake cool down for a few minutes, take it out of the pan, remove the parchment paper and 

let the cake cool completely on a wired rack. Trim the edges.

6. Heat the jam a little, pass it through a sieve, and add the orange liqueur (optional). Cover the 

cake with the jam and let it cool.

7. Melt the chocolate with the coconut oil in a bowl above warm water or microwave them for 30 

seconds. Pour it over the cake to cover completely, move the cake to a cool place and wait until 

the glaze is dry.

CARAMELIZED PEAR WITH CREAM AND NUTS PARLINE

                               This is my first recipe post for my 5ingredient fix challenge. When i planned to start this challenge I feared a lot but I've got good response from my friends and my fellow bloggers.I thank all of them who supported me and guided me to do this challenge.I'm so exciting to see my friends recipies,who have joined this challenge.

                        I thought in this month of love we can start with sweet dish to impress our loved ones.My kids don't like to eat pears that much,So I think of making it delicious so that they can't resist to eat it.It really happened yesterday they ate all of them without any argument and gave me a kiss for the lovely dish from my loved ones.

5 ingredients for february challenge


                          Here is that wonderful recipe try this and make your loved ones happy...........................


Ingredients:

Pear-3,peeled and deseeded 

  brown sugar-1/3 cup

   water-2 tbsp  

 butter-1 tbsp 

 cinnamon stick-1/4 inch

whipped cream-2 tbsp  

For parline:

walnuts-1/4 cup

 sugar-1/4 + 3 tbsp  

To decorate:  

Cherries


Method: 

               Heat sugar with 1 tbsp water till it turns its color add crushed walnut and mix well to coat.pour them in a baking sheet or tray and allow them to cool.When cooled crush them in blender coarsely and store.You can store them in fridge for upto 6 months. 

To caramelise pear:

           Heat a non-stick pan add Butter to melt add brown sugar,water and cinnamon stick cook till sugar melts then place the pear upside down,Close lid and cook for 5 mins then flip them and cook for another 5 mins.Pour the sauce over the pear to coat well,close lid and cook for another 15 mins till the pear softens and cool them .

To assemble:

               In a plate place cooked pear and pour the sauce over them.Squeeze the whipped cream over the pear and sprinkle nuts parline and decorate with cherries.Now enjoy the treat.........................

SPINACH AND POTATO CURRY

       
                          



  Spinach and potato curry

                               A good accompaniment for roti,naan,chapathi etc..spinach is a very healthy green leafy vegetable and good for kids.It will improve their memorypower and stamina.Many kids won't like green leafy vegetable.If you give them with good taste and appetizing then they will eat them.This dish is one of them.Do try this dish and impress your kids.

Ingredients:

Spinach-1 cup

Potato-1/2 cup,boiled and diced

Green chillies-2

Garlic-2pods

Redchilly powder-1 tsp

All spice powder-1/2 tsp

Onion-1 big,chopped

Oil-1 tbsp

Cuminseeds-1 tsp

Cumin powder-1 tsp

Tomato-1,chopped

Amchur powder(dry mango powder)-1/2 tsp

Kasurimethi(dried fenugreek leaves)-1 tsp,crushed

Salt to taste.

Method:

                                    Heat water and put spinach for 2mins and drain them,this process is called blanching.Add garlic and greenchillies and grind to a smooth paste. In a pan add oil heat them and add cuminseeds when crisps add onion saute well add potato fry for a while and add spinach paste mix well add redchilly powder,cumin powder saute well add amchur powder,tomatoes mix well.add salt to taste and remove from fire then add amchur powder,all spice powder and kasurimethi and serve hot with rumali roti.

ROMALI ROTI

                             Romali roti

 Ingredients:

maida-1/4 cup 

wheat flour-1cup 

salt to taste

 Method:

Mix all well and make a smooth dough with water.Rest them for 10mins.knead the dough again and make small balls,then roll one ball into a thin layer as thin as possible and roll another ball and stick one another and do in tawa with or without oil.when done seperate the layer and fold it like a handkerchief and serve.

CHICKEN SAMOSA/EMPANADAS

                       

Chicken samosa/empanadas

                       Samosa/Empanadas is snack,With the filling inside with any kind of vegetables,sweet or meat.In India,we call it as samosa. It is so delicious and crunchy party snack and everybody love this.

For dough:

Ingredients:

maida-1 cup 

salt-1/4 tsp 

clarified butter(Ghee)-2 tbsp 

ajwain/carromseeds-1/2 tsp 

warm water

 Method:

              Mix all ingredients and make a soft dough and set aside for 15 mins.

For filling:

onion-1/2 cup,chopped 

 tomatoes-1,chopped

 redchilly powder-1 tsp 

spice powder-1/4 tsp 

mutton/chicken minced/vegetables chopped-1 cup

 cumin powder-1/2 tsp

cumin seeds-1/2 tsp 

chat masala/mixed herbs-a pinch

 salt and pepper to taste

maida paste: 

              Mix 1 tbsp maida with some water.

Method:

            In a kadai add oil when heatsup add onion fry well add mutton/chicken minced/vegetables chopped saute till it done add tomatoes saute well add redchilly powder,cumin powder and chat masala/mixed herbs saute well add salt and pepper.cook with some water till it cooked well and stir well till the water absorbs completely and cool them.

                  Take a small portion of the dough and roll in an oblonged shape.Then fold two sides to make a pocket and stick them with maida paste and make a pocket fill them with the mixture and close with otherside stick well with maida paste.Fry well in oil for samosas.For empanadas preheat oven at 200°c.Arrange the empanadas in a tray and bake them for 35 mins and serve.


      

EGG AND VEGETABLE CURRY

                                 



      Egg and vegetable curry

                  This curry is very good combination with rice and chappathi.Usually we do egg curry and vegetable curry,never combine both.But trust me it is awesome.................



Ingredients:

Eggs,hardboiled-4

Onion,chopped-1 cup

Tomato-1/2 cup

Peas,carrot and cauliflower-1 cup,chopped

Bay leaf-1
Cinnamon stick-1/2 inch

Red chilly powder-1 tbsp

Coriender powder-1/2 tbsp

Cumin powder-1 tsp

All spice powder-1/2 tsp

Tamrind pulp-1 tsp

Fried onion-1/2 cup ,grind them with 1/4 cup coconutOil-1 tbsp

Salt to taste

Method:      

                     In a pan add oil heat well add cinnamon stick,bayleaf and onion saute well add vegetables saute a little add tomatoes chopped add some salt and fry well add in the spices redchilly powder,coriender powder,cumin powder add salt and ground onion-coconut paste.Add water and boil till oil seperates and vegetables cooks well.Now add hard boiled egg and tamrind pulp boil for 2mins and remove from fire sprinkle all spice powder and serve.
