CARROT ICECREAM
Carrot Icecream
Ice cream using carrots is it possible? This is the question arises in everyones mind when I say this...But nothing is impossile when we try hard and whole heartedly,this is my strong belief.
This is my challenge for shh secretly challenge from Vimitha Anand.When she suggested carrots and walnuts for me,my mind went blank and confused Which dish I have to prepare?Carrot halwa,carrot stuffed chappathi........I thought over and over again and suddenly a flash came into my mind.......Why not make an Icecream with Carrots and Walnuts..!!!!!!!!
This is a simple recipe with some techniques I used to make a soft and tasty Icecream without any Icecream powders and an Icecream maker.Using Carrots and Walnuts will make you stay away from deficiencies like memory loss,hair loss,cholestrol,obesity etc....Becoz carrots have beta-carotine and walnuts have vitamins A,C,E.
Icecream is an universal word loveable to all ages ,Becoz.......................
Ingredients:
Full cream milk-1 cup
Carrots,chopped-11/2 cups
Sugar-21/4 cups
Milk powder-2 tbsp
Fresh cream-1/2 cup
Walnuts-2 tbsp
Sugar-1/4 cup
Water-2 tbsp
Carrot peels-to decorate
Preparation time:20 mins
Setting time:4 hrs in fridge
Serves:5-6 persons
Method:
ICECREAM:
In a deep-bottomed pan heat milk to boil add carrots and cook till done add in 21/2 cups sugar and stir well.When it dissolves remove from fire and cool them.
Add milk powder to the cooled mixture and beat well in a mixer.
Refrigerate Fresh cream to chill and beat till it thickens and add the mixture and beat well.
Pour the cream mixture into an aluminium tray or in a food grade plastic box and cover tightly then place in freezer for 4 hrs or until it sets.No need to beat again.
PARLINE:
In a heavy nonstick pan add sugar to caremalize add water stir well into thick consistency add crushed walnuts mix well and pour into a heatproof bowl.When cooled break into pieces and sprinkle over icecream.you can mix in the powdered parline into the icecream mixture and set.
You can try this recipe with any kind of vegetable or fruit according to your creativity.

PEANUT AND CHERRY SHORT CAKE
Peanut and cherry short cake
Short cake is a crumble cake or biscuit having a filling of fruits and and cream on top.It usually made of flour,milk and some with eggs.It is an awesome treat for christmas,so yummy and eyecatching for kids and a popular christmas treat in many countries...........The short cake recipes were being followed from 1588 to till date with lots of variations......
I made this yummy recipe with unusual ingredients peanuts and whole wheat flour.But it doesn't leave hands in taste and texture.It is really a delicious dish with christmas special spices topped with cherries and cream.I strongly recommend all my visitors to try this recipe.It can be made easily by beginners too..........
It can be topped with any kind of fruits that available in that season.You can try this with orange,mango,rasberry,strawberry etc....I think marmalade can also work well.Lets have a look of this yummy christmas treat.......!!!!!!!!
Peanut and cherry short cake
Makes-2 medium sized short cakes
Prep.Time- 40 mins
Cooking time-15 mins
5 mins for assembling
Ready in 1 hr
Easy to make
Ingredients:
Wholewheat flour-1/2 cup
Peanuts,ground-2 tbsp
Icing sugar-2 tbsp
Butter-31/2 tbsp
Ice water-1 tsp
Cherries-1/4 cup(I used tinned)
Lemon juice-1 tsp or you can add orange juice also
Nutmeg powder- a pinch
Whipped cream-1 cup
vanilla essence-few drops
icing sugar-2 tsp
caster sugar-1 tbsp
cocoa powder-1/2 tsp(optional)
pink colour-1 drop
Method:
Dry roast peanuts and remove husk.In a mixer add peanuts and 2 tsp icing sugar beat till it makes powdered form.
Seive wholewheat flour and ground peanuts with 2 tbsp icing sugar add butter and mix well to make a crumbly texture.Combine them well with ice water to make a soft dough.Wrap the dough with cling film and keep it in fridge not freezer for 30 mins.
Take out from fridge and roll flat sprinkling with some flour on top in 1/2 inch thick and cut a big roundel using a cutter.........
Meanwhile.......
Preheat the oven at 170°c/350°f
Place the flattened short cake in a baking tray and bake for 12-15 mins or till it turns light brown.
Remove from oven and cool them.In the meantime prepare the cherry topping and make the whipped cream..
Cherry topping:
In a pan add tinned/fresh cherries,caster sugar,nutmeg powder,cocoa powder,lemon/orange juice,vanilla essence cook till the cherries mashes well and reserve.
Whipped cream:
Freeze cream,beater hooks and the bowl for an hour.Now beat the cream until peaks add pink food colour mix well and put into a piping bag with decorative nozzle.
Assembling:
To assemble the short cake place a shortcake in a plate and fill the cherry topping in the middle then pipe some cream on the sides of the cake.You can decorate as you wish and enjoy the christmas treat......!!!!!!!!!
Dont hesitate if you dont have medium sized cutter,you can also use any round boxes to make the shape.
I've rolled and cut the dough and then kept in fridge becoz it will be very firm when we take out from fridge.Obviously the dough will crack when rolling adjust it with flour.Preheating is approximately done for 10 minutes.Bake the short cake according to your oven temperature more or less than 15 mins.You can use plain flour instead of whole wheat flour and almond instead of peanut

SHEERMAL(FLAT BREAD)
Sheermal(Flat bread)
Sheermal is a persian flat bread which takes a main part in mughlai cusine.It has taken it main part in hydreabadi and lucknow cusine.It is made of flour and ghee with yeast in saffron flavour.It is a sweet bread baked in oven,can be eaten as it is or with any stuffing.
I made it for WKTB group in fb by Aparna from my diverse kitchen.
Sheermal(Flat Bread)
Ingredients:
Flour-21/4 cups
yeast-11/2 tsp
sugar-2 tsp
salt-3/4 tsp
Egg-1
lukewarm milk-1/4 cup
milk-1/2 cup
rose or vanilla essence-few drops
Ghee-1/4 cup
saffron-few strands
Method:
In a mug add lukewarm milk,salt and sugar dissolve them and sprinkle yeast on it and place undisturbed for 10 mins or till rises up.......In a standmixer bowl add Egg and milk whisk well.Add the yeast mixture,rose/vanilla essence mix well.
Sift the flour and add gradually to the wet ingredients and knead a soft and pilable dough in the middle add ghee to coat well.
Place in a bowl,cover well and place aside for 11/2 hrs till it rises up.Now flour the surface and divide the dough into 2 parts.Spread the dough into a flatten disc with 11/2 inch thick.place on the baking dish and prick them with fork.Mix saffron and warm milk and brush them on sheermal.Meanwhile...
Preheat the oven to 180°c
Bake sheermal for 10-15 mins,do not over bake them and serve with jam or any kind of spread..........Enjoy this delicious bread..............

CHAPPATHI-EGG RICE WRAP(Burrito)
Chappathi-EggRice Wrap
Whole wheat Chappathis are healthy and wholesome meal. It helps us to get vitamins and minerals to our body.When it is stuffed with egg rice then we dont need any other dishes to complete our meal.It is fullfilled,colourful and mouth-watering dish........
A burrito is a type of Mexican food consisting of a wheat flour tortilla wrapped or folded into a cylindrical shape to completely enclose the filling. The flour tortilla is usually lightly grilled or steamed, to soften it and make it more pliable.Try out this yummy recipe and enjoy international dish at home using available ingredients at home.............I made this wrap for shh secretly challenge.This time my partner is Ramya venkateshwaran.She suggested me flour and egg.........
For the dough
Ingredients:
Flour-1 cup
salt-1/4 tsp
water needed
Method:
In a bowl add flour and salt mix well add water knead to a thick dough,cover with wet cloth and keep aside for 10 mins.Roll out a small ball sized dough into a thin flat sheet.Heat the griddle/tawa do on both sides without oil.cool the chappathis.
For Egg Rice:
Ingredients:
Boiled Rice-1/2 cup
Egg-2
Onion-1 medium size,chopped
Capsicum chopped-2 tbsp
oil-1 tsp
Cumin seeds-1/2 tsp
pepper crushed-1/2 tsp
Garlic crushed-2 pods
salt to taste
Method:
In a wok/deep bottomed pan add oil heat well add cumin seeds to splutter.Add garlic,onion saute well add eggs leave for 1min undisturbed when it half boiled break them into pieces and stir well.Add in salt and pepper mix well and cool them.
For Assembling:
Onion-1,thinly sliced
Lettuce leaves-2 pieces
Egg Rice a cup
Tomato sauce-1 tbsp
Cheese-1 tbsp,grated(optional)
Mix Egg Rice and tomato sauce and set aside.
In a plate place one chappathi sprinkle onion slices on one side.Place one lettuce leaf and a scoop of Egg rice mixture spread on one side.Sprinkle cheese and roll the wrap tightly by folding the sides.You can serve as it is or do again on the tawa and serve warm.........

CREAMY MUSHROOM AND POTATO BAKE
Creamy mushroom and potato bake
Potato is an universal vegetable.We can explore it in different ways.It can be combined with any vegetables,meat or anything..........Mushroom is also the same,you can have it with anything.This mushroom-potato bake is a wholesome meal and so tasty.......Try this out its is so easy to make too.............
Ingredients:
method:
Cut potatoes into thick slices.
In a sauce pan add butter to melt add in maida and whisk vigourosly without any lumps.when it slightly changes colour add milk and stir continously.Stir well or it will make lumps.when it thickens slightly add sliced mushrooms,salt,white pepper powder and nutmeg powder mix well and rest them for a while.
Preheat oven on 200°c.
In a baking dish grease butter all over and arrange sliced potatoes in on layer and pour some cream mixture over it.Sprinkle cheese and then layer another set of potatoes and do the same layering by finish them with potatoes on top and cover with cheese.Sprinkle bread crumbs over it and bake at 200°c for 25-30 mins.Serve hot.............

HERBAL SOUP
Herbal Soup
Cold and cough will never leave us in any season.If we are low immune then this dragon will live with us for ever.Cough ll never leave us even to sleep.Even kids will suffer a lot of cold and cough........Medicines for cough will give you relief but not immediately.......I present you hear a herbal payasam which will give immediate relief and comfort from severe cold..............
I got this recipe from my aunty and she got this from her mom,may be she got from her mom.................................It is so authentic and tested recipe.So you can try this without any fear......................very simple and yummy medicine The ingredients given below are full herbal products you can find these items in a departmental store or in an organic shop in your locality...............
Serves-3 persons
prep time-`5 mins
cooking time-5 mins
Ingredients:
Raw rice-2 tbsp
chitharathai(galangal roots)- 1 stick
Thippili(long pepper)-1/2 stick,Break into two
vaalmilagu(Tailed pepper,Jawa pepper)-3-4 corns
panam kalkandu(crystalized palm sugar or rock candy)-3 tbsp
jaggery-1/4 cup,grated
coconut grated-2 tbsp or coconut milk-1/2 cup
water-1 cup ground paste :3 cups water
a pinch of salt
Method:
Soak raw rice in water for 20 mins.
Grind chitharathai(galangal roots),Thippili(long pepper), vaalmilagu(Tailed pepper,Jawa pepper) grind them to a course powder and take 1/2 tsp from that powder.You can preserve the remaining for next time.Add soaked Raw rice and ground powder to the mixer and grind to a fine paste with some water.
In a nonstick pan put ground paste stir well with water if you are using coconut milk use instead of water,milk should be watery in 1:3 ratio and heat them....stir continuously because it may create lumps.When the mixture thickens add panam kalkandu(crystalized palm sugar or rock candy) stir till it dissolves.Mix in grated jaggery,salt and coconut grated,if not using coconut milk.Stir well and remove from fire and serve hot..............!!!!!!!!!!
Note:
- Use Raw rice(paccharisi)
- mix the ground paste either in water or in coconut milk
- Use coconut milk or grated coconut
- While boiling stir continuously to prevent lumps you can use ballon whisk too..
- For grated jaggery slice the jaggery with knife.
- you can make this in drinking cosistency or in soup consistency.For drink,use some more water or coconut milk.
- It is very effective when drink in empty stomach.
Do it drink it and keep yourself and your family away from this nasty cold.........
