PUFF PASTRY(CHICKEN AND EGG PUFF)
















Chicken and Egg puff

Puff the name itself tells us.......It is puffed up,fluffy and flacky.It is the basic thing to make with various stuffings.A vegetarian,Non-vegetarian or even sweet.It is so crispy and flaky by the way it is prepared.Needs more attention and patience to make this pastry.I tried it for 3 or more times but got it right only now.........

If we try it with patience and creative mind we get a good outcome.The needed ingredients are so simple,It can be tried by everyone who loves to make different dishes.Make the puff dough and its rolling on oneday and the filling and baking on other day.It will give you more time to make it prefect.I like to thank Swathi from zesty kitchen and sangeetha priya......

Ingredients:

Maida-200 gms  

 butter-200 gms 

  salt-1/2 tsp 

 Ice cold water-1/4 cup (adjust to consistency of the dough)

Method:

Place butter in a plate with butter paper shape them to a rectangle,you can shape them when they are soft.cover them and place in fridge for 20-30 mins till firm.

 In a bowl add maida,salt and add cold water,knead a firm dough.Knead well till it becomes soft and pliable.Wrap it with a cling film and keep in fridge for 20 mins.

Now remove butter from fridge and place them outside for 10 mins.Knead the dough dusting with  maida flour into a rectangle.The dough should be bigger than the rectangled butter.

Place butter in center of the dough,close the sides well.Butter should be covered well with the dough.Dust them and roll into a long rectangle.Shape three times bigger and fold one edge into the centre and then cover with other edge.The fold should be three layers.Then turn the dough and knead again to a long rectangle.Don't worry when the butter comes out.Just dust them and roll.Fold again in three quaters and roll again.Do it for 3 times wrap them with clingfilm and place them in fridge for 20 mins.Now again remove from fridge dust them roll and fold then dust roll and fold for 3 times and cover,,refrigerate again for 20 mins.Repeat the process for 3-4 times and cover them well and refrigerate till use.......................

You can fill any kind of filling in the puff.A vegetarian,Non-vegetarian or even sweet..........


Ingredients:

chicken-Minced-1 cup   

ginger-garlic paste-1 tsp  

Onion-1,Big sliced

Tomato-1,chopped 

 Red chilly powder-1/2 tsp   

  spice powder-1/4 tsp 

salt to taste  

Oil-2 tsp  

Hard boiled Egg-2,cut into cubes   

Method:

In a pan add  oil heat a while add onion fry well add ginger-garlic paste saute till the smell evaporates.Add chicken pieces fry well add in tomatoes,redchilly powder,spice powder and  salt cook well till dry and cool.

Remove puff pastry from fridge place aside to reach room temp.roll thin cut into desired shape and fill in the stuffing mixture and egg on one side and fold them close  completely.

Preheat oven to 200°c.

Arrange the filled puffs in a greased tray,coat well with beaten egg and bake them for 10-12 mins.Serve hot.............

I made the filling with jam also and rolled like a toffee.We can make the puf in different shapes.....

CHEESY CHEESE BALLS


Cheesy cheese balls

cheese.........kids love it a lot.....!!!!! These cheese balls are soo cheesy filled with yummy cheese and chewy mozarella inside.Cheese is nutritious with calcium,protein and phosphorous.It is good for gums,heart diseases etc,......

It is a yummy dish with some spice and chewy mozarellla inside.I made this for my 5 ingredient fix challenge.This time I haven't gave any ingredients specifically but have to make a fry or fritter use with only 5 ingredients.As usual the plate became empty when these fries are out of oil...............

Ingredients:

Cottage cheese(paneer)-1 cup 

 green chilly-3 nos  

Coriender leaves-1/4 cup  

Mozarella cheese-1/2 cup(cut into small cubes) Keep in fridge till use

Bread crumbs

Salt to taste 

Oil to fry


Method:

Grind green chillies and coriender leaves to a fine paste.In a bowl crumble cottage cheese(paneer) add ground spice and salt mash well.Make small balls and press with thumb in middle just stuff a mozarella cube inside and close them roll tight balls.In a plate spread bread crumbs and heat oil in a pan.Roll the balls in bread crumbs coat all sides completely and fry them at low heat.

NOTE:

  • Be careful while stuffing mozarella cubes,close fully with paneer mix.
  • If the oil is not much hot,the cheese stuffed inside may pop out.






























CHOCOLATE RELISH TREAT



                 Chocolate-Cinnamon relish treat



                       I'm not a big fan of chocolates,but my elder daughter is a chocoholic.She can do anything for chocolates and viratkohli.May be thats the reason my space has more chocolate recipes.This is not a mousse,I can say it is a chocolate dessert...........This a four layered dessert with vanilla custard,cinnamon infused sugar,some fruits and ofcourse chocolates......!!!!!!!!!!!!!!!

I made this recipe for shhh secret challenge by Priya Suresh .I'm paired with  Pallavi Purani from http://thoushaltcook.wordpress.com/ 

She suggested me Yummy chocolates and smoky cinnamon........Now we go into the recipe before that we have work on it.

Cinnamon infused sugar:

  • Cinnamon-4 sticks
  • Sugar -1/2 cup 
                       In an airtight container add both and close tightly,leave them for a week.Now you can get the smell of cinnamon in sugar too......

Ingredients:

 first base:

Vanilla pudding mix-2 tbsp

Milk- 1/2 cup

cinnamon sugar-2 tbsp(powdered)  

In a pan heat milk add pudding mix and sugar stir to become thick.Cool them and set in a mousse cup to 1/4 level and set in fridge.It'll take 30 mins apx..........

Second base:

Chocolate-1/2 cup(sugared or dark)  

Cream-1/2 cup  

cinnamon powder-a pinch 

Heat cream till warm add chocolate and cinnamon stir till chocolate dissolves.Now pour into half of the cup over the set vanilla mix and set them in fridge for another 30 mins.

Third base:

Seasonal fruits-1/4 cup(chopped)

I used ramuttan and lychee chopped

add a layer of chopped fruits just 1 tsp in each cup.Spread them and set aside for few mins.

Fourth base:

In this layer you can use any kind of ice cream mix as directed by the pack.I used black currant Icecream powder mixed with hot milk.

Icecream mix- 4 tbsp 

 hot milk-1/2cup

Mix them and cool completely pour into the cup and level the top.Then set in fridge for another 30 mins and decorate with chopped chocolates,cinnamon powder and fruits.Now enjoy the layers of Chocolate cinnamon relish treat.................

GAVICHI KHEER(WHEAT KHEER)


Gavichi kheer



This kheer is the authentic recipe from maharastra.All over India people make this kind of sweet dish in many names kheer,payasam,pradaman etc....Wheat is a good fibre and very good for health.The original recipe contains wheat germs soak them in water whole night,grind them and use....It's a long process I've done a cheating work by using bulgar(broken wheat).

It is as healthy as whole wheat germ and easy to cook.To make the kheer thick use rawrice soaked in water and grind to a fine paste.you can use rice flour simply.And  when we comes to jaggery you all know ,It contains Iron,calcium etc.........But beware It may contain mud so make a syrup,strain and use...On the whole this Kheer isa healthy and nutritious one............Lets see the recipe now.......

mmmm.........one more thing I made this recipe for south vs north challenge on fb by Divya pramil suggested by Manjula kanted .Hosted by Manjula, Unfortunately this is the last month of this challenge............


Gavichi kheer

Ingredients:

Broken wheat-1 cup   

Rice flour-2 tbsp 

Jaggery-3/4 cup

 water-3/4 cup  

coconut milk-1/2 cup 

 Ghee-4 tbsp  

nuts-2 tbsp

cardamom powder- a pinch 

saffron-2 strands

 a pinch of salt to enhance the taste(optional)

Method:

  • Soak broken wheat in water for 20 mins.Don't use water from the above measurement.Use water enough to soak bulgar completely.

  • In a heavy bottomed pan add jaggery and given water boil till jaggery dissolves and makes a fine syrup,strain and set aside.
  • In another pan add ghee and nuts brown them and remove from ghee.In ghee add soaked bulgar, you can notice that the bulgar has absorbed all the water.fry a little add some water to boil them well.Add coconut milk and rice flour stir them without any lumps.Now add jaggery syrup,fried nuts,cardamom powder,salt,saffron strands boil for just 5 mins and serve hot yummy kheer........!!!!!!!!!!

KADI GOLE(MAHARASTRIAN KADHI)

We make kadhi in different versions from different parts of India.In South India,we make with buttermilk and turmeric powder mixed with rice paste named as "morr kulambu".North Indian will mix butter milk with gram flour named "kadhi".......Any boiled vegetables can be added to this to enhance the taste.This maharastrian Kadhi is made of GOLE,a dhal dumpling boiled in butter milk and mixed with spices......The dish is awesome and goes well with Rice,Roti.The consistency of dal batter should be very thick otherwise it will break and mix with butter milk.

This recipe I made for Divya pramil's SNC challenge hosted by prerana khanwalkar.So sad that Divya is winding up the SNC group from August.Only one recipe rest to make for this group.It makes me feel so bad but no other way than to go with Divya...............

Here is my yummy kadi gole with step wise pictures..............


Ingredients:

Channa dal-1/2 cup  

Yoghurt(curd)-1 cup 

 green chillies-2 nos

 ginger-1 tbsp(grated)

 Garlic-3 pods 

Gram flour-2 tsp

  Red chilly powder- 1 tsp

  Coriander powder-1/2 tsp 

Turmeric powder-1/4 tsp(can be added more to attain its color) 

Asafoetida-a pinch  

Oil/ghee-2 tbsp 

 Cumin seeds-1 tsp

  salt to taste 

Sugar-1/2 tsp If needed but I didn't added 

Curry leaves-one sprig 

Method:

Soak Channa dal in water till overnight or you can fool by soaking in hot water for 20 mins.In a mixer jar add strained channa dal,green chillies,half of ginger,garlic,salt grind like a coarse paste without excess water.Make small balls and set aside.

Now whisk curd with water into buttermilk consistency add in gram flour and salt whisk well without any lumps.Pour the mixture  into a heavy bottomed pan and bring to boil.When it starts boiling add remaining ginger.Now gently add chana balls one by one into it.Boil well for 10-15mins.Don't rush when putting the balls add one after one on sides.In a pan heat oil/ghee add cumin seeds,curry leaves make to splutter.add redchilly powder,coriander powder,turmeric powder,asafoetida saute a little but the color should not change.Add the tempering into the kadi and serve hot with Rice or Roti.....!!!!!!!!

CAULIFLOWER SCONES



           

                               Cauliflower scones


                               This is my first post for the secret recipe group by priya.She will give us partners and we have to discuss two ingredients each and we have to prepare a recipe with both or one of the choosen ingredient.It's an awesome experience with my partner srividhya and We have become good friends now and sure we'll keep in touch always.Thanks to priya for giving me such a good friend. My secret ingredients suggested by srividhya are cauliflower and milk. 

                                    I just thought of making a different dish but didn't know what to prepare with cauliflower.Suddenly scones came into my mind and not even know whether I can make a scone with a vegetable.A scone is a single-serving cake or quick bread. They are usually made of wheat, barley or oatmeal, with baking powder as a leavening agent, and are baked on sheet pans. They are often lightly sweetened or unsweetened.It is basically belongs to british tradition.

                                   I made scones with cauliflower and prepared a stuffing with onions and cheese. I feel so happy with the result I've got and the taste is awesome.It made a fantastic combination and I've got many guests to eat the scones.They all enjoyed it a lot.

shhhhhh secret recipe challenge needs one hour to make and I've got 12 scones.


Ingredients:

Maida Flour-250 gms  

salt-1 tsp 

lemon juice-3 tsp  

baking soda-1/2 tsp  

oil-2 tsp milk-120 ml 

boiled and mashed cauliflower florets-3 tbsp 

milk to glaze 

                                  

Method:

           In a mixing bowl add all the above ingredients and make a smooth dough.Flour the surface and knead the dough to make it soft and smooth.Roll them into 1/2 inch thick log.cut them into 2 inch thick roundels.Arrange them in a baking tray and brush them with milk wash and bake at 190°c for 12 mins.Cool them for a while.

For topping:

Ingredients:

Onion-1 big,chopped  

Red bell peppers(capsicum)-1 tbsp

chopped tomato-1 chopped  

 dried oregano-1/2 tsp  

dried basil-1/2 tsp  

remaining mashed cauliflower,if any 

redchilly powder-1/2 tsp 

 Grated cheese-1/2 cup  

oil-1 tsp

salt to taste 

Method:

             In a pan add oil add onions saute well add capsicum fry till it gets cooked.Then add remaining cauliflower,tomatoes,oregano,redchilly powder and basil  saute well and cool them.Grate cheese and set aside.

            When the scones are lightly cooled cut into half and one bottom half fill the topping sprinkle grated cheese on top and close with another half.Now bake them at 180°c for 3 mins and serve hot.

TOMATO -CARROT SOUP WITH FRIED GARLIC



I have a Tomato soup recipe before on my blog but this recipe is an unique recipe with boiled Tomato and carrot and fried garlic.Mmmmm................ the soup is so yummy and delicious.I really love the texture and taste of the soup Hope you all also will love it.....................



I made this soup for my 5 INGREDIENT FIX CHALLENGE.This month I've given 

  • BUTTER
  • ONION
  • TOMATO
  • CARROT and
  • HERB

My recipe "Tomato-carrot soup with fried garlic" follows try it and enjoy friends..............

Ingredients:

Butter-1 tbsp  

onion-1 tbsp  

 garlic-1 tsp  

Tomato-1 cup  

carrot-1 big 

 cumin seeds-1/2 tsp  

peppercorns-1 tsp 

mintleaves-4-5   

basil fresh-4-5 leaves or dried basil-1 tbsp  

salt to taste  

Kashmiri chilly powder- 1/2 tsp 

Method:

In a microwave bowl heat water in high for 2 mins then add Tomato,Carrot,Onion,mint leaves and boil them for another 3 mins. Cool them and peel the skin from Tomato and carrot put in a blender add rest of the ingredients and grind well.

In a pan or microwave bowl add butter heat till it melts add garlic fry till golden brown or microwave for 2 mins.Add the ground soup boil for 3-4 mins and serve hot..........!!!!!!!!!!!!!
