OATS AND WHOLE WHEAT SANDWICH BREAD#BREADBAKERS
Oats and wholewheat sandwich bread
I bought only breads from outside. When I started baking the amazing moment I got when I baked bread for the first time its speechless......Onwards I never bought bread in stores regularly I bake them once in a week. This sandwich bread is with oats and whole wheat flour which is totally healthy and soft.........This post is for bread bakers hosted by Rocio who has given an amazing event with Oats this month..........................
makes-2 loaves
prep time-11/2 hrs
baking time-35 mins
Ingredients:
Whole wheat flour- 51/2 cup
Yeast-2 tsp
Warm water- 1 cup
unsalted butter- 2 tbsp
milk- 1 cup
Sugar- 1/4 cup
salt - 1 tbsp
Oats- 1/2 cup
Method:
In a bowl add warm water sprinkle some sugar and a pinch of salt from the measured and sprinkle yeast over them. Leave aside for 10 mins till it proves. Add melted butter,1 cup flour, milk and oats to the yeast mixture mix well and set aside for 5 mins.
Insert hook attachment with a beater add the yeast mixture mix well add remaining flour slowly and knead the dough till smooth and pliable atleast for 10 mins. Place them in a warm place covered for an hour to rise. When the dough rises roll them gently and put them in a greased sandwich tin. Keep aside for 20 mins till it rises again . Coat them with milk and sprinkle some oats over them.
Preheat oven to 200 degrees.
Reduce the heat to 180 degree and bake the bread for 30-35 mins. immedietly brush butter over the bread to gain its colour.Cool completely and slice them to serve.................

EGGLESS JOAN"SCAKE/ RAINBOW CAKE
Joan's cake/ Rainbow cake
Every time I make the cakes my heart will jump like a small girl with excitement........ I enjoy a lot when the cake rises up.This cake is a very special cake for me becoz it was on my wishlist for over a year.But I haven't tried it as it needs lots of ingredients.........When swathi from zesty kitchen and julie suggested this recipe for baking partners I decided to try it out.
No Idea which cake I'm taking about It is a rainbow cake but not a regular one.We have to use fresh fruits and nuts to attain its colour.It is nothing but JOAN"S RAINBOW CAKE....Yummy delicious cake with lots of flavours inside.........You can make it as 2 days plan.First day prepare the cakes and do icing on the next day............
Joan's cake/Rainbow cake
Strawberry cake:
Fresh Strawberry- 1 cup+ sugar-2 tbsp+ water-1/4 cup
Heat them well and mash the pulp measure 3/4 cup of strawberry pulp for the cake
flour-1 cup
baking powder-1 tsp
powdered sugar-1/2 cup
flaxseed powder-1 tbsp+3 tbsp water mix well and set aside for 10 mins.when you mix it will be in jelly form.
butter- 3 1 1/2 tbsp
Pink food colour-few drops(I haven't used colour)
Sift the flour and baking powder and set aside.
In a bowl add butter and powdered sugar beat well till foamy add in flaxseed mixture mix well.Now stir in strawberry pulp to mix completely and get a pinkish colour.If you want you can add colour.
Sift the flour and baking powder thrice.
Preheat oven to 180°c
Now fold in the flour to the mixture and mix well till combined without any lumps.Grease a baking tin and pour the mixture into and bake for 35-40 mins according to your oven temp.Cool completely and store in fridge covered with cling flim.
Pista cake
Ingredients:
Pistachios- 3/4 cup
milk- 1/4 cups + 2 tbsp
baking powder-1 tsp
powdered sugar-1/2 + 2 tbsp
flaxseeds mixture- 3 tbsp(method mentioned above)
butter-30 gms
pista essence- 1 tsp
green food colour- few drops(I din't used)
Method:
Preheat oven to 180°c.
In a bowl beat butter and powdered sugar together till foamy.Add in pista essence,milk,flaxseed mixture,green colour if needed and beat well.Now sift in flour and baking powder into the wet mixture and mix well till combined.Now pour the batter into the greased baking pan and bake at 180°c for 25-30 mins and cool completely. Keep in fridge covering with cling film till use.
Orange cake
Ingredients:
All purpose flour- 11/4 cup
Baking powder- 1 tsp
Sugar-3/4 cup
Butter-1/2 cup
Orange juice-1/2 cup
Orange zest-1 tsp
Flax seed mixture- 1 tbsp
Orange essence & colour- 1/2 tsp (optional)
Method:
Cream together butter and sugar add in flaxseed mixture, orange juice,zest, essence & colour combine well. Fold in sifted flour and baking powder mix well. Pour in a greased tray and bake at 180°c for 30 mins. Cool completely.
Fresh cream Icing:
Whipping cream-2 cups
Icing sugar- 2 tbsp(optional)
Beat chilled cream till stiff peaks form add in icing sugar beat well. refrigerate till use. Put them in a pipping bag with prefered nozzle.
Soaking syrup:
Sugar- 1/4 cup
water-1/4 cup
lemon juice-few drops
Make syrup with sugar,water and lemon juice strain and cool them.
Assembling :
On a cake board pipe some cream and place orange cake sprinkle soaking syrup and pipe cream to spread over the cake. Place pista cake,sprinkle the syrup and spread some icing on it. Then place strawberry cake sprinkle the syrup. spread the cream to cover all the cakes evenly spread with palette knife. This is the crumb coat and keep in fridge till it sets. Now add needed colours to the icing mixture. Pipe them on the cake with your creativity and serve this yummy cake................
