CREAMY CHOCOLATO

We will always fond of trying delightful dishes from wonderful recipes. Even we use the right measurements and quantity there will be some excess reserved in your fridge. Like that in my fridge there was some reserved chocolate cake, crumbled biscuits. In addition I made chocolate cream mixture       and layered them in a short glass, set in fridge…………..Wow!!!!! Yummy and delightful dessert is on my table.

                                         I made this dish for my 5 ingredient fix challenge with 5 ingredients.It is easy and yummy try this for sure.You will love it………….



                                                                Ingredients:

                                     leftover chocolate cake-1 cup                                    

 Crumbled biscuits-1 cup  

     cream-1 cup       

                              cocoa powder-1 tbsp   

                                  Powdered sugar-1 tbsp

                                       Method:


                    In a bowl add cream beat till stiff add in cocoa powder and powdered sugar  beat well. In a tall glass/cup first layer chocolate cake then sprinkle crumbled biscuits then pour cream mixture and then layer the cake then biscuit crumble and pour cream. Do the layering until it reaches top and complete with cream. Set in fridge for 1/2 hr and decorate with cherries then…………Enjoyyyyy……!!!!!!!!!!!

NEWYORK CHEESE CAKE(EGGLESS)





















Newyork cheese cake(eggless)



I m very fond of cakes and I've tasted this cheese cake once in a bakery and moved towards its yummy flavour.But the creamcheese used in this is unavailable in my locality and also it is very costly too.So I decided to make everything at home.I made creamcheese the day before and made cheese cake today.I can't say that I've made an original version of newyork cheese cake but the taste is yummy,delicious and can say all the antonyms of the word "yummy".

Ingredients:

For the base:

Biscuits,ground and seived-2 cups  

 Butter-90 gms

   Powdered sugar-1/4 cup+2 tbsp

Cream cheese filling:

Cream cheese-1 cup

cream-1/4 cup  

 vanilla essence-1 tsp  

 lemon juice -1 tbsp



Method

1.In a bowl mix ground biscuits you can use any crackers or biscuits for this recipe.Mix in pwdered sugar and add soft butter to it.Mix well with hands to coat over and must form the shape when you make by your hands,this is the consistency of the base.

2.prepare a spring form tin and fill the mixture all over you can spread only the base or can fill the sides also to appear like a cup shape.I made a cup shape,may be the fear that the finished product should appear neat.Use a flat bowl little smaller than the form tin place above the base mixture and press well ,it will help to form a smooth surface.Then place in the fridge for 1 hr to set.

3. While the base is setting in the fridge add creamcheese in a bowl and beat well.Add the remaining ingredients and make a whisk till soft and creamy.

pre heat oven in 180°c

4.Remove the base from the fridge and pour the cream mixture over it and bake for 12-15 mins.remove from oven cool them and cool for 1 hr in the fridge and serve............











Note:

you can make bakeless version from this same recipe but baking will give you smooth finish and enhanced taste.Don't hesitate if you don't own a spring form tin just cover aluminium foil in a seive(chalni) plate and do the process.

I don't know how much I have done justice to an original newyork cheese cake recipe :P

HOMEMADE CREAM CHEESE

    







Homemade cream cheese




      We would think cream cheese cannot be made at home.It can only store bought but in stores it costs very high and it cannot afford to our budget.
Now don't worry guys cream cheese can be made at home very easily.Just follow these steps........

               Ingredients:

       Full cream milk-1 ltr
           Lemon juice/vinegar-1 tsp
         Curd-1 tbsp  
          cream-1 tbsp

                                                                    Just these easy right.....
        

             Method:

      In a large bowl pour milk boil well then add vinegar/lemon juice give a good stir and keep boiling till the whey and cream seperates.Take a bowl and place a strainer on it and place a muslin/thin cloth over the strainerNow pour the curdled milk over the strainer and set aside for 10-20 mins till the water drains.

Put the strained cheese in the mixer and add  cream ,curd and blend well.

Now transfer again to the cloth,close completely and tie a knot in the edge like a baggage.Hang the baggage and place a bowl under them to collect the excess whey.leave them hanging for 6-7 hrs till it leaves the excess whey completely.Now remove the cream cheese from the bag and  transfer  in an airtight container and set aside overnight or you can store in fridge.Next morning  your cream cheese is ready to use........................

CHICKEN BALLS IN COCONUT GRAVY



















                                        Chicken balls in coconut gravy

    Chicken is a yummy meat that can be the good combination with any kind of masalas.It is a gravy version of authentic kola balls prepare in south india.But not a fried kolas so its healthy too........You can feed to toddlers who cannot chew the meat.when you eat it,it will melt in your mouth.I assure that........!!!!!!!!!!!!!!Easy to make too..............

Ingredients:

Chicken,boneless-200 gms 
Onion-2
Tomatoes-2
Ginger garlic paste-1/2 tsp
Redchilly powder-1 tbsp
Thyme-a pinch,dried(optional)
Rosemary-a pinch,dried(optional)
Curry powder-1/4 tsp
Bread crumbs-1 tbsp
Coconut milk-1/2 cup
Cream -1 tbsp
Oil-2 tbsp
Salt to taste

Method:

Place tomatoes in hot water,peel the skin and grind to a paste or you can use tomato puree-2 tbsp.
In a mixer jar add chicken pieces,thyme,rosemary,one onion chopped,salt and a tsp of redchilly powder grind to a fine paste and roll them into small balls and set aside.
In a pan heat oil and add remaining onion saute well then add ginger garlic paste saute till aroma comes out then add tomato puree,remining redchilly powder,curry powder saute a while till tomato puree changes its colour then pour the coconut milk and salt place chicken balls one by one undisturbed and cook till chicken balls cooks well and oil seperates.pour in a bowl add cream on top and serve hot with rotis,naan or rice.......



Note:

I used dried thyme and rosemary becoz it goes well with chicken and gives them an aromatic smell.You can avoid if you dont want to include.If you want to make it more healthy without coconut milk then use finely ground onions instead of chopped onions and avoid cream.

MANGO SHORTCAKES















                                                  Mango shortcakes


This is the season for mangoes and our city in known as mango city.we have lots of mango trees around us and love the sweetness and taste of mangoes.This recipe is actually not a cake recipe its like a crusty round biscuit stuffed with fresh cream and seasonal fruits like sandwich.Actual recipe contains berries and I used mangoes,it is really awesome taste me and my kids love it....................

It makes 10 short cakes and we can cut them into half and stuff the filling,mine was very small and I used 2 shortcakes to make a sandwich.My cream filling is not only with freshcream but also I used vanilla custard  with pink color to enhance its taste.There is no use of butter in this recipe just to coat the cakes.The yummy shortcake filled with pink vanilla custard cream and the yellow mangoes.............

WOW..................It is a delicious combination to kindle our tastes buds.....................

INGREDIENTS:

Mango-1 cup,peeled and cubed  

 Sugar-4 tsp + 2 Tbsp,divided   

APF flour-2 cups (13/4 cup + 1/4 cup corn flour)   

Salt-3/4 tsp

Baking powder- 1 tbsp   

Heavy cream-1-11/4 cups

 Melted butter - 1-2 tbsp  

Whipped cream - 1 cup 

Vanilla custard powder - 2-3 tbsp  

Icing sugar-2 tbsp 

 Coarse sugar - to sprinkle on top

METHOD: 

Mango filling:

In a bowl add cubed mangoes and 2 tbsp sugar mix well and keep in fridge till use.

Short cake:

In another bowl add butter and sugar beat well add heavy cream and vanilla custard powder mix well.

Sift APF flour,salt and baking powder well and add to the creamy mixture and knead a soft dough.Don't worry if the dough cracks,it can be adjusted while cut with cookie cutters.

Make balls and roll into a thick flattened sheet,then cut into the desired shapes with cookie cutters. sprinkle coarse sugar on top.

Preheat oven in 180°c

Arrange them in a nonstick/greased baking tray with gaps and bake them for 15-18 mins.


Whipping cream:

In a clean bowl add chilled whipping cream beat well till peaks form add in sugar and beat well and place them in a pipping bag with anykind of nozzle.

 

 Mango short cake:

Cut the biscuit into 2 halves pipe some whipped cream on one half and place mango filling on it and close half with another half of  the biscuit. Now enjoy the melting moments with crusted biscuit,cream and mangoes.mmmmmmmm......Yummmmmmmm.....!!!!!!!!!!!!!

FALAFEL WRAP(RESTAURANT STYLE)





Falafel wrap(Restaurant style)


When hearing this name you will think that this recipe is not my type and I can't afford my time and money to try this recipe at home.But wait................It is a very simple recipe you can easily make at home with the ingredients stored in your fridge............I used rajma(dry red beans),paneer these are the two ingredients suggested by Hema vijai for Shhh secret challenge by priya suresh.And adding to that I used wheat flour,cheese(you can avoid),onion and some seasonings thats it.See the above all ingredients you can get from your pantry right?Now lets see how can we make it and surprise our kids.....!!!!!!!!!!

Ingredients:

dough:

wheat flour-1 cup   

salt to taste 


Rajma Falafel(Tikki):

Rajma(Red kidney beans)-1/2 cup  

potato,boiled-1/2 cup

  onion,big-1,chopped 

cashew nuts-1 tbsp,optional

   red chilly powder-1/2 tsp

  spice powder-1/4 tsp 

 salt to taste   

 corn flour/maida-1 tbsp 

 bread crumbs-1/2 cup  

oil to fry


Cream sauce:

Paneer-1/4 cup grated  

Cheese(cheddar/processed)-1 tbsp,optional  

Red chilly powder-1/2 tsp 

 Salt a pinch 

  Sugar-1/2 tsp 

 Dry herbs-1/4 tsp or ajwain(omam)-a pinch 

cream/milk-1/2 cup


Method:

Soak Rajma(red kidney beans) overnight or 6-7 hrs.

In a bowl add wheat flour,salt and some water mix well and knead the dough till soft and elastic.

Pressure cook them with some and water till mashed.Drain them and add to the mixer add in redchilly powder,salt,boiled potatoes,cashewnuts,spice powder,you can use any kind of spice powder or regulPar garam masala powder grind well till combined and mashed well.Now heat oil In a wide bowl add corn flour and some water to make a paste not too thick or watery........In another plate spread bread crumbs.Take some rajma mixture roll them like a ball and slightly flatten them,shape them to round flat tikkis dip them into the corn mixture and coat bread crumbs all over then again dip them in corn mixture then again coat bread crumbs completely and do deep fry or shallow fry.

In a blender add paneer,cheese,red chilly powder,dry herbs/ajwain,salt(cheese contains salt so add needed,cream/milk,sugar and salt grind to a fine paste.

Now take a ball shape of the wheat dough and roll flat and round.With a knife make a cut from centre and start rolling from one end to another.Now you get a long cigar shaped dough.Coat some oil over the dough and again roll them round and flatten them to a chapathi shape.It is non other than the method to make malabar parathas.Heat griddle/tawa cook the parantha till done with some oil.Now you get a flaky parantha.

To assemble the falafel wrap:

Take one prantha and place two rajma falafel pour some cream sauce over them and fold half.You can serve them as it is or can heat them in tawa for some time and serve hot.........!!!!!!!!!!!Isn't that easy to make a restaurant style dish at home..........
