CHICKEN QUICHE






Chicken Quiche

An awesome open pie with yummy filling is on its way to your kitchens through this to grab you to try a new and diff dish apart from regular curries and rotis.......Me and my kids really love to make it and also love to eat aswell. I assure you and your kids will also love it............................





Ingredients:

pie crust:

2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 cup (2 sticks) cold unsalted butter, cut into pieces
  • 1/4 to 1/2 cup ice water

method:

  • Combine flour, salt, and sugar. Add butter mix  until mixture resembles bread crumbs and Sprinkle with  ice water and mix the dough into a rough dough.
  • Divide dough in half, and turn out onto two large pieces of plastic wrap. Fold plastic over each portion of dough; press to shape into two 3/4-inch-thick disks. Refrigerate until firm, at least 1 hour.
  • On a floured piece of parchment paper, roll one disk of dough to a 14-inch round. Wrap dough around rolling pin; unroll over a 9-inch pie plate. Gently fit into bottom and sides of plate (do not stretch dough).  trim dough to a 1-inch overhang all around; refrigerate until ready to use.
  • Preheat oven to 180 degrees and bake the pie with lentils on top for 10 mins and then bake again without lentils on top for 10 more mins.

Filling:

ingredients:

mushroom/ chicken- ½ cup,chopped
onion- 1, chopped
tomato- 1, chopped
red chilly powder- 1 tsp
garam masala- 1 tsp
salt to taste
milk- 1 cup
eggs- 2 beaten
cheese-½ cup,grated

method:

In a pan add oil saute onion fry well add tomatoes and mushroom/chicken saute well. Add red chilly powder, garam masala and salt saute well till it cooks well and cool.

Mix in eggs and milk and mix well pour the mixture to fill the pie and sprinkle cheese on top and bake at 180 degrees for 30 mins















Note:
You can use any filling for this quiche.

CHICKEN STUFFED CASSEROLE BREAD #BREADBAKERS








Chicken stuffed casserole bread


I love breads a lot and escpecially stuffed one. Our #Breadbakers group has challeged us to make a stuffed bread hosted by jenni. I was planning to make a sandwich bread which I make occasionally at home. when I filled the bread tin  found some dough left behind. An idea flashed in my mind,why don't I try a casserole bread? Smiley

 This will resemble a pie or quinche but it is made of a bread dough. Sooo yummy and  delicious bread loved by my kids a lot.......!!!!!!!!!!!

Cook time-50 mins  


Chicken stuffed casserole bread

BREAD

Ingredients:

Maida/All purpose flour-  21/2 - 3 cups  

Yeast- 1 tsp 

Warm milk- 1/2 cup 

 salt- 1 tsp 

Sugar- 1  tbsp 

 Water- 1/2 cup  

Butter- 1 tbsp 

Method:

Heat milk to luke warm and add a pinch of sugar and salt sprinkle yeast over them and set aside undisturbed for 10 mins or till its frothy.

In a paddle attached standmixer add the yeast mixture and butter mix well. add in water , remaining sugar and salt mix well. Now gradually add in the flour and knead the dough with medium speed. After adding the flour increase the speed and knead well till the dough is elastic and pliable. Place the dough in a greased bowl and rest them in a warm place for 45 mins to 1 hr till it doubles..........

Chicken-paneer Stuffing:

I made the Indian style chicken for stuffing to enhance the taste and a variation of International bread with Chettinad chicken.

Ingredients:

Chicken-1 cup,boneless cubed  

Onion-1,chopped  

Tomato-1,chopped

  Ginger-garlic paste-1/2 tsp 

 Chettinad masala- 1 tbsp  

 mustard seeds- 1/2 tsp

  curry leaves- 1 strip 

 Dry red chillies- 2, broken  

  paneer(cottagecheese)-2 pieces,crumbled

 Oil- 1 tbsp  

Method:

In a pan heat oil and add mustard seeds to splutter add in ginger-garlic paste saute till its aroma enhances. Add dry red chillies onion saute well add in chicken pieces saute till chicken is half done. Add in tomatoes and saute till its cooked well. Now add water and salt cook till its half done. Add in chettinad masala powder and cook for some more time till chicken cooks well and water dries completely. Add paneer(cottagecheese) crumbled into the chicken mixture and mix well and cool them completely.

Casserole bread:

Slightly knead the risen dough in a floured surface and seperate them into 2 parts. Grease a casserole with butter and fill the dish with half part of the dough.Spread them to close the surface with a cavity in center. Now fill in the cooled mixture and close them completely with another part of the dough. 

Preheat the oven in 200° c 

Coat the top with egg wash and bake them for 25-30 mins. Serve them hot................


Chettinad masala

cinnamon-1 sticks 

 cardamom-2 pieces

 cloves-2 pieces

 cumin seeds-1/2 tsp 

 pepper corns- 2

 fennel seeds-1/2 tsp  

coriender seeds- 1 tbsp

  Red chillies whole-4-5 pieces  

Dry roast them and grind to coarse powder.

TEDDY BEAR STUFFED BUN








     Teddy bear stuffed bun









       


                When we hear the word Buns,we ll think of soft and fluffier buns which can go well with tea and coffee.Having soft buns with a yummy chicken stuffing is awesome combo which can have for breakfast itself.....In addition to that the spongy and beautiful teddy shape is an extra attraction to invite kids to grab this bun.......
                           This bun is made for WKTB group by Aparna.She has suggested us to make a bread with stuffing  but not in regular shape....I 've planned to make a cartoon character bun and this teddy bunny came into my mind.Got ideas from google and I made this bun with a secret ingredient in it and stuffed chicken inside sounds yum yum yum.....!!!!!!!!!!!

Ingredients:  

 Bread:


Maida-51/2 cup(can use half maida and half wheat flour)

  dry yeast-2 tbsp

  milk-1 cup,luke warm 

  salt-11/2 tsp or to taste

Butter- 2 tbsp 

 flax seed paste-1 tbsp flax seed powder mixed with 3 tbsps water leave aside for 5 mins

 sugar- 2 tbsp  

warm water-1cup

chicken stuffing:

minced chicken-1 cup     onion-1,big chopped  Ginger-Garlic paste-1/2 tsp  Redchilly powder-1/2 tsp curry powder-1/2 tsp  salt to taste lemon juice-1/4 tsp  coriender leaves-few  oil-1 tbsp

method:

In a pan add oil,when it heats up add onion fry a while add ginger-garlic paste,red chilly powder,curry powder saute till aroma arises.Add minced chicken and salt saute till its done.Add in coriender leaves and lemon juice.Remove from fire and cool them.


Stuffing the buns:

Method:

In a bowl add luke warm milk not too hot and nor cool if you insert your finger you must feel it is heat,that is lukewarm.Add sugar and salt stir to dissolve now sprinkle yeast over the milk and rest them undisturbed for over 10 mins or till it becomes frothy.

In a bowl add butter and flaxseed paste,If it is unavailable add 1 egg beat till combined add yeast mixture,warm water mix well and place on a beater with hook attachment or knead by hands for 10-15 mins.

place the dough in a greased bowl and cover with cling wrap and set aside for 1-2 hrs to rise.when its risen up seperate the dough  into 4 quarters.

 Make one big ball shape and flatten them slightly then place on a greased baking tray.This is the body of the teddy bear.Take 2 small balls make a couch in centre and fill chicken stuffing then close and roll the ball.sligtly flat them and place in sides of the body to make hands.........Take a little bigger balls fill the stuffing and place them as legs.Then take a big ball stuff in and place as head.Do the same and make ears,nose.....Place halved cherry for the nose and use raisins for eyes etc.........

Rest them for 20-25 mins for second rise.Preheat oven to 180°c and coat milk wash over teddies and bake them for 35-40 mins.................


















If you don't have beater then mix with whisk and knead the dough by hand.It will be too sticky so use maida flour to prevent your hands from sticking.

CHICKEN BALLS IN COCONUT GRAVY



















                                        Chicken balls in coconut gravy

    Chicken is a yummy meat that can be the good combination with any kind of masalas.It is a gravy version of authentic kola balls prepare in south india.But not a fried kolas so its healthy too........You can feed to toddlers who cannot chew the meat.when you eat it,it will melt in your mouth.I assure that........!!!!!!!!!!!!!!Easy to make too..............

Ingredients:

Chicken,boneless-200 gms 
Onion-2
Tomatoes-2
Ginger garlic paste-1/2 tsp
Redchilly powder-1 tbsp
Thyme-a pinch,dried(optional)
Rosemary-a pinch,dried(optional)
Curry powder-1/4 tsp
Bread crumbs-1 tbsp
Coconut milk-1/2 cup
Cream -1 tbsp
Oil-2 tbsp
Salt to taste

Method:

Place tomatoes in hot water,peel the skin and grind to a paste or you can use tomato puree-2 tbsp.
In a mixer jar add chicken pieces,thyme,rosemary,one onion chopped,salt and a tsp of redchilly powder grind to a fine paste and roll them into small balls and set aside.
In a pan heat oil and add remaining onion saute well then add ginger garlic paste saute till aroma comes out then add tomato puree,remining redchilly powder,curry powder saute a while till tomato puree changes its colour then pour the coconut milk and salt place chicken balls one by one undisturbed and cook till chicken balls cooks well and oil seperates.pour in a bowl add cream on top and serve hot with rotis,naan or rice.......



Note:

I used dried thyme and rosemary becoz it goes well with chicken and gives them an aromatic smell.You can avoid if you dont want to include.If you want to make it more healthy without coconut milk then use finely ground onions instead of chopped onions and avoid cream.

PUFF PASTRY(CHICKEN AND EGG PUFF)
















Chicken and Egg puff

Puff the name itself tells us.......It is puffed up,fluffy and flacky.It is the basic thing to make with various stuffings.A vegetarian,Non-vegetarian or even sweet.It is so crispy and flaky by the way it is prepared.Needs more attention and patience to make this pastry.I tried it for 3 or more times but got it right only now.........

If we try it with patience and creative mind we get a good outcome.The needed ingredients are so simple,It can be tried by everyone who loves to make different dishes.Make the puff dough and its rolling on oneday and the filling and baking on other day.It will give you more time to make it prefect.I like to thank Swathi from zesty kitchen and sangeetha priya......

Ingredients:

Maida-200 gms  

 butter-200 gms 

  salt-1/2 tsp 

 Ice cold water-1/4 cup (adjust to consistency of the dough)

Method:

Place butter in a plate with butter paper shape them to a rectangle,you can shape them when they are soft.cover them and place in fridge for 20-30 mins till firm.

 In a bowl add maida,salt and add cold water,knead a firm dough.Knead well till it becomes soft and pliable.Wrap it with a cling film and keep in fridge for 20 mins.

Now remove butter from fridge and place them outside for 10 mins.Knead the dough dusting with  maida flour into a rectangle.The dough should be bigger than the rectangled butter.

Place butter in center of the dough,close the sides well.Butter should be covered well with the dough.Dust them and roll into a long rectangle.Shape three times bigger and fold one edge into the centre and then cover with other edge.The fold should be three layers.Then turn the dough and knead again to a long rectangle.Don't worry when the butter comes out.Just dust them and roll.Fold again in three quaters and roll again.Do it for 3 times wrap them with clingfilm and place them in fridge for 20 mins.Now again remove from fridge dust them roll and fold then dust roll and fold for 3 times and cover,,refrigerate again for 20 mins.Repeat the process for 3-4 times and cover them well and refrigerate till use.......................


Chicken and egg puff

You can fill any kind of filling in the puff.A vegetarian,Non-vegetarian or even sweet..........


Ingredients:

chicken-Minced-1 cup   

ginger-garlic paste-1 tsp  

Onion-1,Big sliced

Tomato-1,chopped 

 Red chilly powder-1/2 tsp   

  spice powder-1/4 tsp 

salt to taste  

Oil-2 tsp  

Hard boiled Egg-2,cut into cubes   

Method:

In a pan add  oil heat a while add onion fry well add ginger-garlic paste saute till the smell evaporates.Add chicken pieces fry well add in tomatoes,redchilly powder,spice powder and  salt cook well till dry and cool.

Remove puff pastry from fridge place aside to reach room temp.roll thin cut into desired shape and fill in the stuffing mixture and egg on one side and fold them close  completely.

Preheat oven to 200°c.

Arrange the filled puffs in a greased tray,coat well with beaten egg and bake them for 10-12 mins.Serve hot.............

I made the filling with jam also and rolled like a toffee.We can make the puf in different shapes.....

CHICKEN SAMOSA/EMPANADAS

                       

Chicken samosa/empanadas

                       Samosa/Empanadas is snack,With the filling inside with any kind of vegetables,sweet or meat.In India,we call it as samosa. It is so delicious and crunchy party snack and everybody love this.

For dough:

Ingredients:

maida-1 cup 

salt-1/4 tsp 

clarified butter(Ghee)-2 tbsp 

ajwain/carromseeds-1/2 tsp 

warm water

 Method:

              Mix all ingredients and make a soft dough and set aside for 15 mins.

For filling:

onion-1/2 cup,chopped 

 tomatoes-1,chopped

 redchilly powder-1 tsp 

spice powder-1/4 tsp 

mutton/chicken minced/vegetables chopped-1 cup

 cumin powder-1/2 tsp

cumin seeds-1/2 tsp 

chat masala/mixed herbs-a pinch

 salt and pepper to taste

maida paste: 

              Mix 1 tbsp maida with some water.

Method:

            In a kadai add oil when heatsup add onion fry well add mutton/chicken minced/vegetables chopped saute till it done add tomatoes saute well add redchilly powder,cumin powder and chat masala/mixed herbs saute well add salt and pepper.cook with some water till it cooked well and stir well till the water absorbs completely and cool them.

                  Take a small portion of the dough and roll in an oblonged shape.Then fold two sides to make a pocket and stick them with maida paste and make a pocket fill them with the mixture and close with otherside stick well with maida paste.Fry well in oil for samosas.For empanadas preheat oven at 200°c.Arrange the empanadas in a tray and bake them for 35 mins and serve.

LEMONY BARBECUE CHICKEN

                    




 Lemony Barbecue chicken

    Barbecue chicken this is the magic word for every chicken lovers.They think that they can only eat this dish in restaurants and it is difficult to make at home.No need of any barbecue equipment.We can make it in our oven itself. 

Ingredients:

chicken-1 kg, lolly pop pieces
barbecue sauce

Barbecue sauce:

shallots/Small onions-2,finely chopped


soy sauce-1 tbsp


lemon juice -2 tbsp

marinated chicken in ziplock pouch

lemon zest-1 tsp,peel off a lemon

 brown sugar-1 tsp(optional)


Honey-1 tsp

Dry thyme-1/4 tsp

 Dry rosemary-1/4 tsp

wochestershire sauce-1 tsp


freshly crushed pepper corns-1 tbsp,can add according to your taste
extra virgin olive oil-1 tbsp
salt to taste
       In a saucepan add all above ing. for sauce and boil well till it thickens and cool, store in an airtight container and place in fridge even for a month.

Method:

    Put chicken pieces and sauce in a ziplock pouch and shake well to coat over the sauce in chicken.place the marinade in refrigerator for 6 hrs to 12 hrs.

  preheat oven to 210 degree c.
    Arrange the chicken pieces in the baking tray and reduce the heat to 200 degree and bake for 30 mins or shallow fry them in a non-stick pan and serve with lemon wedges.

HONEY CHICKEN


                               


 Honey chicken




This is a chinese based recipe.my kids love this chicken and it is an ideal dish for the people who doesn't eat much chillies.Do try this at home you'll be praised by your family members.I assure you that.

Ingredients:


To marinate:

Chicken wings-4 pieces
Redchilly flakes-1 tsp
Cornflour-1tbsp
Honey-1/2 tsp
Soy sauce-1/2 tsp
Salt to taste
Marinate all the above given ing. For 10mins.
Heat oil and fry the chicken till crisp and  golden brown.
For glaze:
Onion-1,diced
Capsicum-1/2 diced
Gingerpaste-1 tsp
Garlic chopped-1 pod
Soy sauce-1 tsp
Freshly crushed pepper-1/2 tsp
Sugar-1 tsp
Red chilly sauce-1/2 tsp
Oil-1tbsp
Salt to taste
coriender leaves to garnish

Method:

In a wok add oil heat a whlie add onions and capsicum toss well till onion become translucent,add the rem. ing. toss well add the fried chicken wings stir till it coats well and garnish with coriander leaves,
serve hot with rotis,naan,noodles,pastas or bread.if u wish can take it with rice also.

TANGY CHICKEN

                           

 Tangy chicken 

It is an indian chicken recipe with italian herbs it is a good combination of spices and makes a good taste.It tastes really well and my kids love it a lot.Every kid would love it do try this recipe.

chicken legs-4 pieces (slit)

To marinate:

soy sauce- 1tsp

 orange juice-1 tbsp

orange zest-1/4tsp

red chilly powder-2 tsp
garam masala-11/2tsp
ginger paste-1tsp
garlic paste-1tsp
kashmiri chilly pr-11/2tsp
mixed herbs-1/4 tsp
pepper powder-1tsp
butter-2tbsp
oil-2 tbsp
chat masala-11/2tsp

Method:

In a bowl add above ing for marination mix well.coat well on chicken legs and keep aside for 1/2 an hour.In a non-stick pan heat 1 tbsp oil arrange chicken legs braise for 2 mins on both sides.place on a baking tray brush with butter and bake on a pre heated oven in 200 degree for 8-10 mins till it turns brown or fry them in the same braise pan with little more oil....remove and sprinkle chat masala on top and serve hot.
